Bristol Bay Alaska Tourism, LLC, dba Bristol Adventures, is looking for a Chef/Kitchen Manager for our Brooks Lodge in Katmai National Park. The lodge, under a Concessions Contract with the National Park Service, is the busiest of our three locations. We provide our guests with extraordinary experiences in a stunning Alaskan setting, surrounded by bears, eagles, and fish. As the Chef, you will be part of a dedicated team of 26 staff members supporting the lodge, which accommodates up to 64 guests. Additionally, there is a campground for 60 people nearby, and Brooks is a popular fly-in destination for day trips, including fishing and bear viewing.
This is a temporary seasonal position. Food and housing will be provided at no cost. The standard workweek is seven days, with approximately eleven hours per day. Pay is issued every two weeks, standard overtime applies, and tips are pooled among all staff.
Responsibilities:
Oversees all kitchen operations including supervising and participating in all food preparation, supervising kitchen staff, food ordering, proper food storage and rotation, inventory, quality control, schedules, special diet requests, kitchen cleanliness, and adherence to U.S. Public Health Service Standards.
Essential Skills:
Experience in a restaurant operation that includes breakfast, lunch, and dinner. Preparation for 350 to 500 covers per day incorporating a family-style buffet menu.
Certifications:
Current ServSafe manager certification and HACCP
Three years of kitchen supervisory experience in a restaurant operation.
