POSITION:  Lead Cook

 

 

BASIC FUNCTION:

 

Under the direction of the Supervisor or Director of Health and Nutrition, lead and participate in food service operations and activities including special events and school meals with the preparation, baking, cooking, distribution and delivery of food items to meet student/staff needs; oversee related inventory, cashiering and sanitation functions; train and provide work direction and guidance to assigned personnel.

 

REPRESENTATIVE DUTIES:

 

ESSENTIAL DUTIES:

Lead and participate in foodservice operations and activities including the preparation, baking, cooking, distribution, and delivery of food items to meet student needs, including special diets and catering events; ensure related activities comply with established standards, policies and procedures.

 

Ensure that meals provided to preschool and afterschool programs meet the Child Adult Care Food Program and National School Lunch guidelines administered by the United States Department of Agriculture.

 

Monitor breakfast, lunch, supper, and snack menus  to meet the Child Nutrition Program guidelines. 

 

Determine the appropriate quantity of food items for preparation; bake      and cook food according to standardized recipes to meet scheduled menu requirements and operating timelines; adjust and extend recipes; observe and ensure      proper quality and quantity of food served.

 

Lead and participate in activities to assure food service facilities, equipment and utensils are maintained in a clean and sanitary condition; inspect and review food preparation and serving areas to ensure compliance with established health, safety, and sanitary standards and regulations.

 

Train and provide work direction and guidance to assigned personnel, arrange substitutes as needed; assign employee duties and review work to assure accuracy, completeness, and compliance with established standards, requirements, and procedures; provide input concerning employee evaluations as requested.

 

Oversee and participate in preparing and cooking entrees, fruits, vegetables, sandwiches, and other assigned foods for distribution; assemble various ingredients; heat, package store, and wrap food items according to established procedures and portion control standards.

 

Monitor inventory levels of food items and service supplies; estimate and order adequate quantities to ensure meals are provided; receive and verify accuracy of food and supply deliveries; assure proper storage and rotation of food items and supplies.

 

Operate standard food service equipment such as ovens, slicers, mixers, can openers, steamers, and various kitchen tools and utensils; utilize a computer and assigned software; drive a vehicle to conduct work and deliver food items as needed.

 

Lead and participate in preparing meals and food items for delivery to school sites and catering events; review and verify quantities of outgoing shipments; load hot and cold transport carts with specified food items and supplies for distribution to school sites.

 

Oversee the preparation, cooking, and heating of breakfast, lunch, and snack items; oversee the assembly, washing, mixing, slicing, and chopping of various ingredients; coordinate and inspect food preparation functions to assure compliance with food freshness and appearance standards.

 

Monitor and inspect food service activities to ensure     food quality, quantity, sanitation practices, and safety conditions meet established standards and requirements; oversee and participate in assuring proper temperature of foods.

 

Communicate with staff and various outside agencies to exchange information, coordinate events and activities requiring catering to resolve issues or concerns.

 

Prepare and combine necessary ingredients to ensure appropriate nutrition guidelines and to maximize supplies.

 

Maintain accurate records and standardized reports as required by program regulations.

 

Complete nutrition trainings as assigned.

Estimate, order and assure adequate levels of food items and supplies.

Follow and assure compliance with health and sanitation requirements.

Assure food service facilities, equipment and utensils are maintained in a clean and sanitary condition.

Store and rotate food supplies in storage areas according to established procedures.

Oversee and participate in the delivery and preparation of food items for distribution to school sites.

Maintain records and prepare reports related to assigned activities.

Operate a computer and assigned software.

Operate standard kitchen equipment safely and efficiently.

Meet schedules and time lines.

Work independently with little direction.

Communicate effectively both orally and in writing.

Establish and maintain cooperative and effective working relationships with others.

Prioritize daily tasks to assist in efficient operations of food service and delivery.

 

EDUCATION AND EXPERIENCE:

 

Any combination equivalent to:  graduation from high school and two years experience in quantity food cooking, baking and preparation.

 

LICENSES AND OTHER REQUIREMENTS:

 

Valid Serv Safe certification.

Valid California driver’s license.

Regularly lift and/or move up to 10 pounds, frequently lift and/or move up to 20 pounds, and occasionally lift and/or move up to 30 pounds.

Ability to lift in excess of 30 pounds with assistance.

Ability to push/pull force up to 50 pounds.
