Summary
The Form Line Fryer Operator is responsible for monitoring all equipment on the formed product line from the blancher through the fryer, up to and including the oil system. The Form Line Fryer operator is responsible for the Batter Line as well as , adding and mixing additive, performing free fatty acid tests, maintaining and recording temperatures of equipment in the work areas, ensuring correct oil type is used for the product being produced, entering and changing data in the computer system, maintaining tote fill area and ticket making, and sanitizing the work area.
The Main Line Fryer Operator is responsible for monitoring all equipment on the main line from the peelers through the fryer, up to and including the oil system. The Main Fryer Line operator is responsible for the batter line adding and mixing additive, performing free fatty acid tests, maintaining and recording temperatures of equipment in the work areas, ensuring correct oil type is used for the product being produced, entering and changing data in the computer system, and sanitizing the work area.
The individual in this position will be required to fully understand the purpose and operation of the main line processing area along with having to make decisions based on sound judgment when a situation dictates.

- Ensures alertness and constant awareness of the safe operation of moving equipment and other potential safety hazards in a production plant.
- Ensures necessary level of communication is maintained with the appropriate personnel.
General Responsibilities
- Must become qualified within 45 working days of employment in this position.
- Ensures the ability to demonstrate an understanding of the processing concepts of cutting, blanching, and drying, conditioning, final cutting, ingredient addition, forming, frying, and freezing units of operation.
- Ensures the ability to demonstrate an understanding of the Statistical Process Control (SPC) program which includes upstream grading, zone control, and troubleshooting as well as an ability to follow all program guidelines and procedures.
- Ensures the ability to monitor equipment and process control readings, record data in reports both manually and electronically, and make process decisions based on process data collected from equipment in the form line area.
- Ensures the ability to perform all assigned process checks and tests and records collected data in reports both manually and electronically; in addition, ensure that target values are met and process changes are made according to zone control and process data.
- Ensures that the oil system is operated safely and correctly to maintain proper filtration and free fatty acid levels; in addition, ensures the ability to manage the usage of oil according to productions budgets and oil matrix procedures.
- Ensures the ability to identify, explain, adjust, set up, shut down, start up, and ensure the proper working condition of equipment and control panels in the form line area, which includes all equipment from the surge bin to the spiral tunnel. In addition, reports any noises or conditions that could signal a breakdown to the appropriate personnel with an emphasis on preventative maintenance.
Typical Education
High school diploma or equivalent required.
Relevant Experience
- Combination of experience and education will be considered.
- Must be able to perform the duties as outlined in the Essential Functions.
- 6 months to a year of experience as a Fryer Operator.

- Ensures the ability to perform daily cleaning tasks and major cleanup duties in a safe and timely manner and maintains a work area in accordance with food safety, chemical safety, and proper cleaning techniques.
- Utilizes computer and computer programs to communicate, document, and track shift information and ensures that all documents and reports are completed accurately in a timely and efficient manner.
- Ensures attendance and participation in training activities appropriate to the position and to incorporate acquired skills and knowledge.
- May assist in training other personnel.

- Ensures proper food safety sanitation and cleaning procedures of all formline equipment and systems.

- Ensures that additional accountabilities required by management are handled in a manner necessary to meet operational standards.
