SUMMARY
Cook 2 is proficient in all duties of Cook 1. In addition, Cook 2 is responsible for performing various duties in food preparation and cooking on single hotline stations following the methods and procedures set by the Standard Operating Procedures (SOP’s) of the Food and Beverage Leadership.
COOK 1 ESSENTIAL DUTIES AND RESPONSIBILITIES
- Clean, wash, and maintain pots, pans, dishes, service equipment, and utensils.
- Clean and maintain all back-of-house Food and Beverage outlets.
- Ensure prep area organization, cleanliness, and sanitation.
- Perform removal of trash and separation of recyclable materials.
- Responsible for proper rotation, storage, and maintenance of products.
- Clean refrigerators and freezers.
- Deck Brush floors, clean mats, and drains in all assigned areas.
- Transport F&B products throughout all areas of the department.
- Restock all dishes and utensils.
- Assist with prep work as needed under the direction of the Lead Cook.
- Assist on buffets or special events under the direction of the Lead Cook.
- May assist at a station on the line under the guidance of the Lead Cook.
- Adhere to State and Federal Health department sanitation codes.
- Meet attendance guidelines by reporting to work as scheduled with dependability and consistency.
- Represent the company in a positive manner.
- Maintain professional dress standards and personal appearance as dictated by the policy manual.
COOK 2 ADDITIONAL DUTIES
- Prepare food for the cooking line.
- Ensure prep lists are prepared and cooking line is stocked at the beginning and end of each shift.
- Ensure prep area organization and sanitation to ensure food does not fall into the danger zone.
- Consult with Food & Beverage Leadership regarding daily operations as it relates to food preparation and stock levels ensuring that adequate supplies are maintained.
- Support minimal food waste and portion control.
- Assist cooks working on the hotline by following menu specifications.
- Work on single hotline stations.
- Perform all duties relating to the Cook 1 position.
- Other duties as assigned.
SUPERVISORY RESPONSIBILITIES
May assist with training the Cook 1 position, as directed by Food & Beverage Leadership.
QUALIFICATIONS

EDUCATION and/or EXPERIENCE
High School Diploma or General Education Degree (GED) and a minimum of one (1) year of consistent food and beverage experience; or equivalent combination of education and experience.
LANGUAGE SKILLS
Must be able to read, write, speak, and understand English; read, write, and comprehend simple instructions, short correspondence, and memos. Effectively present information in one-on-one and small group situations to customers, and other employees of the organization.
MATHEMATICAL SKILLS
Add, subtract, multiply, and divide in all units of measure, using whole numbers, common fractions, and decimals.
COMPUTER SKILLS
Working knowledge of computers and familiarity with Microsoft Suite as well as a POS system is a plus.
REASONING ABILITY
Common sense understanding in carrying out instructions furnished in written, oral or diagram form. Dealing with problems involving several concrete variables in standardized situations. The ability to multitask is a must.
CERTIFICATES, LICENSES, REGISTRATIONS
Class II Gaming License issued from the Skokomish Tribal Gaming Commission, current Washington Food Handlers Permit and a valid Washington State Driver’s License.
