SkyBridge Luxury & Associates is seeking an experienced Chef de Cuisine on behalf of our client to lead the culinary operations at a luxury resort in the heart of Sonoma County, CA. ESSENTIAL JOB FUNCTIONS
- Oversee all culinary operations, ensuring a seamless dining experience across the resort’s restaurant, in-room dining, and bar/lounge.
- Maintain complete knowledge of and comply with all departmental policies, service procedures, and standards.
- Supervise the quality, preparation, and presentation of all menu items, ensuring consistency and excellence.
- Forecast, plan, and execute daily food production based on guest volume, catering functions, and VIP requests.
- Collaborate with the Food & Beverage leadership team to develop innovative seasonal menus, aligning with local and sustainable food trends.
- Maintain inventory and purchasing procedures, ensuring high-quality ingredients while managing cost controls.
- Conduct daily briefings with Sous Chefs and kitchen teams to review schedules, assignments, anticipated business levels, and any special events.
- Monitor guest satisfaction and service quality, ensuring an exceptional culinary experience that aligns with the resort’s luxury standards.
- Oversee and enforce state sanitation, health regulations, and resort safety standards to maintain impeccable cleanliness and hygiene.
- Train, mentor, and develop kitchen staff, fostering a culture of excellence, teamwork, and innovation.
- Ensure all equipment is properly used and maintained, submitting work orders for maintenance repairs when necessary.
- Assist the Catering and Sales Departments in developing special event menus, collaborating with clients to create bespoke culinary experiences.
QUALIFICATIONS
- 3-5 years of experience as a Chef de Cuisine or in a similar leadership role at a luxury hotel, resort, or high-end restaurant.
- Proven expertise in overseeing multiple dining outlets, including restaurant, bar/lounge, and in-room dining operations.
- Certification in Culinary Arts, Apprenticeship Program, or equivalent experience.
- Strong knowledge of seasonal, locally sourced ingredients and a passion for farm-to-table cuisine.
- Ability to develop and execute cost-effective menus while maintaining exceptional quality standards.
- Strong leadership skills with the ability to train, mentor, and develop high-performing teams.
- Excellent communication and problem-solving skills, with a guest-first mentality.
- Ability to work efficiently in a high-volume, high-pressure environment, balancing multiple priorities.
- Food handling certification and fluency in English (both verbal and written).
