SkyBridge Luxury & Associates is seeking a Senior Chef de Cuisine for an Ultra-Luxury Resort on The Big Island. This role will oversee menu development, kitchen operations, and service execution, ensuring an unparalleled dining experience that reflects the resort’s exceptional standards of hospitality.
Key Responsibilities:
- Lead the culinary direction of a high-end dining venue, curating refined, locally inspired menus with a focus on Hawaiian, Asian-Pacific, and contemporary global flavors.
- Oversee day-to-day kitchen operations, ensuring precision, consistency, and impeccable execution.
- Work closely with local farmers, fisheries, and purveyors to source the highest quality ingredients while supporting sustainability initiatives.
- Develop and implement seasonal tasting menus, special events, and exclusive culinary experiences.
- Collaborate with the Executive Chef and F&B leadership to drive guest engagement, menu innovation, and revenue growth.
- Maintain the highest standards in food safety, sanitation, and kitchen organization to ensure compliance with Forbes Five-Star and AAA Five-Diamond guidelines.
- Lead, mentor, and train a highly skilled culinary team, fostering a culture of excellence, creativity, and teamwork.
- Oversee cost control, inventory management, and kitchen budgeting, ensuring profitability while maintaining quality.
Qualifications:
- 7 years of experience as a Chef de Cuisine or Senior Sous Chef in a luxury resort, fine dining restaurant, or Forbes-rated property.
- Expertise in Hawaiian regional cuisine, seafood-driven concepts, or Pacific Rim flavors preferred.
- Strong leadership skills with experience in team development, staff training, and high-volume service.
- Deep understanding of ingredient-driven cooking, seasonal sourcing, and sustainability practices.
- Proven ability to execute high-profile events, tasting menus, and guest chef collaborations.
- Culinary degree or equivalent professional experience required.
