Director of Food & Beverage

Location : Los Angeles, CA

Base Salary : $130,000 to $140,000

Bonuses : Annual, Quarterly, & Annual Discretionary

About the Role :

SkyBridge Luxury & Associates is seeking a dynamic, numbers-driven Director of Food & Beverage to lead a high-volume, multi-outlet operation in Los Angeles, overseeing a $28M annual F&B revenue . This individual will be responsible for optimizing labor, food, and beverage costs while delivering exceptional service and maximizing profitability. The ideal candidate is an expert in financial performance , understands flow-through impact on the bottom line, and has a strong track record of managing F&B operations exceeding $25M in revenue .

Key Responsibilities :

Strategic & Financial Leadership

Develop and execute F&B strategies aligned with the hotel’s financial and operational goals.
Manage labor costs at 25% of revenue , ensuring tight control of scheduling and workforce optimization.
Oversee financial planning, including budgeting, forecasting, and P&L analysis, ensuring strong flow-through to the bottom line.
Implement revenue management strategies to drive profitability across all F&B outlets.
Monitor and control food, beverage, and operational expenses, ensuring strict adherence to budgeted goals.
Analyze financial performance and recommend strategic adjustments to enhance operational efficiency.

Operational Excellence & High-Volume Management

Oversee all banquets, restaurants, room service, events, and AV rentals in a fast-paced, luxury environment.

Directly manage two Restaurant General Managers, Director of Banquets, and Director of Events to ensure seamless execution.

Ensure all outlets operate at the highest standards, meeting brand and guest expectations.

Leverage data-driven decision-making to optimize inventory, purchasing, and vendor negotiations.

Maintain strict adherence to health, safety, sanitation, and alcohol compliance regulations.

Leadership & Team Development

Recruit, train, and mentor F&B leadership teams, fostering a culture of excellence.

Implement robust training programs to elevate service standards across all outlets.

Conduct performance evaluations and drive professional development initiatives.

Guest Experience & Service Innovation

Enhance the guest dining experience through innovation and high-touch service.

Implement guest feedback mechanisms to continuously improve offerings.

Develop creative, revenue-generating dining concepts and promotions.

Ideal Candidate Profile :

Proven success in managing $25M F&B operations, preferably in high-volume, luxury hotels or resorts.

Strong financial acumen with a demonstrated ability to manage labor at 25% of revenue and drive profitability.

Minimum 5 years of senior F&B leadership experience with a focus on cost control, revenue optimization, and guest satisfaction.

Experience leading large-scale banquets, multiple restaurants, in-room dining, and events operations.

Ability to develop and execute financial strategies that enhance bottom-line performance.

Local Los Angeles experience preferred; Hilton experience NOT required.

Bachelor's degree in Hospitality, Business, or related field preferred.
