What are the responsibilities and job description for the Sous Chef position at Skyview Los Alamos, CA?
The Sous chef is responsible for assisting in overseeing BOH operations for all meal periods at Norman at Skyview Los Alamos. The sous chef will assist in menu development, staffing, ordering, food safety and cost control. The Sous chef will report directly to the Chef. The sous chef will assist in overseeing the execution of the Norman culinary program and all special events both on and offsite.
The Sous chef will assist in managing all BOH staff in the chef’s absence, be responsible for product ordering, assist in controlling inventory, and working with the chef to create seasonal menus for all of the F&B outlets focused on using local produce and products. The sous chef will work with the Chef and GM to assist with staff training and proper service. The sous chef will assist the Chef to plan and execute special events menus.
General Responsibilities
Assist in ordering food, ingredients and supplies based on business flow
Assist Menu development/changes as directed by the Chef
Assist in training of all BOH staff
Ensure daily manager logs and all email communications are being acknowledged
Assist in communicating and enforcing performance standards for BOH staff and communicate with management if documentation is needed for disciplinary actions, in accordance with Nomada guidelines.
Assist in monthly inventory
Assist in maintaining kitchen cleanliness, ensuring that food is properly stored and upholding general health department standards
Assist with controlling food and labor costs, basic understanding of set budgets
Maintain company safety and sanitation standards
Adhere to company policies regarding missed breaks and meal periods. Take appropriate disciplinary actions to minimize the risks associated with such behaviors.
Work with the Chef and F&B Director to ensure brand standards are maintained, costs are controlled, and that the work environment is clean and safe at all times.
Work with the Chef and FOH management at Norman to ensure proper food handling, presentation, and FOH staff menu training
Assist the Chef to plan, coordinate & implement special events and holiday menus
Work major services and holidays
The Sous chef will provide input and assist the chef and F&B Director with yearly performance evaluations for all assigned subordinates; while outlining clear goals, expectations, and ensuring adherence to company policies and expectations; through documented disciplinary action, when necessary.

The Sous Chef will work with Chef to assist in controlling food costs with a budget of 30%
The Sous Chef will be BOH manager on duty when chef is not present
The Sous Chef will work with Chef to assist in controlling hourly BOH labor with a budget of 15%
The Sous Chef will work onsite an average of 40-45 hours a week, depending on the business needs
The Sous Chef will meet agreed-upon deadlines and complete projects as assigned by management.
The sous Chef will maintain all assigned documents and spreadsheets within the Nomada google docs “Norman Culinary” folder.
The sous Chef will work in a collaborative and professional manner with all onsite staff and upper management.
Qualifications
Previous applicable experience in a restaurant kitchen, preferably at a hotel.
Possession of a California Food Handlers card and understanding of food safety, sanitation and regulations for workplace safety.
Ability to maintain compliance with applicable health, safety, food handling, and hygiene codes and standards.
Ability to work quickly and efficiently in a fast-paced environment.
Ability to work well as part of a team.
Physical Requirements
Must be able to stand, reach, stoop, bend, lift, and clean during various activities throughout shift.
Must be able to cut and chop foods and perform other related tasks.
As needed, must be able to lift products or supplies up to 50 lbs.
Exposure to heat, steam and cold present in a kitchen environment.
