What are the responsibilities and job description for the 2nd shift Oil Technician position at Snack Craft?
Description: The Oil Technician maintains the oil system and components within the facility. He or she is responsible for maintaining every aspect of the system, from receipt, transfer, filtering, testing, operation, collection, disposal and cleaning. The oil technician is expected to assist in other functions within the sanitation department as needed.

Primary Work Area: Oil Receiving Areas (Lines and Tanks), Oil Storage Areas (Line and Tanks), Oil Use Areas (Fryers)
Core Responsibilities:
- Maintain Food Safety, Food Defense and GMP practices always.
- Follow all OSHA Safety Regulation and Safety Rules.
- Report any Safety concerns to management.
- Ensure that all ingredient oil is received according to procedure in a sanitary manner and to the appropriate vessel.
- Prepare use vessels appropriately and ensure oil transfers are conducted appropriately.
- Monitor the oil in use via testing and determine appropriate course of action such as filtering, refreshing, etc.
- Dispose of waste ingredient oil promptly and according to procedure.
- Clean and maintain the oil system components at designated frequency to ensure food safety and quality.
Duties

Oil Receiving
- Confirm via paperwork that the vessel to be loaded is appropriately prepared to receive the oil.
- Confirm via paperwork that the oil being received is the correct product.
- Confirm the safety/quality of the oil being received by checking the inline screen and magnet prior to and after receipt of the oil.
- Oil Transfers
- Confirm that the vessels used to make the transfer (small tanks or totes typically) are suitably cleaned, sanitized, labeled and otherwise appropriately prepared to receive the transfer.
- Ensure that transfer activities are conducted in a sanitary manner that does not increase the risk of contamination of the oil being transferred.
- Oil Monitoring and Testing
- Deliver samples of oil to the QA lab for FFA and moisture analysis on a prescribed frequency to maintain product quality.
- Collect an oil sample each day and refresh it daily for external analytical testing.
- Collect additional oil samples throughout the duration of accelerated oil degradation for external analytical testing.
- Waste Oil Disposal
- Ensure that materials are in place to properly collect waste oil as it is produced and actively seek ways to prevent the loss of oil into waste.
- Ensure that waste oils are properly transported to the storage bin and inform management when bin is ready for emptying.
- Oil System Cleaning
- To conduct all internal and external cleaning activities related to the fryers, fryer pump skids, fryer heat exchangers, fryer oil piping and storage tanks. This includes daily debriding
- Maintain clean and sanitize equipment, utensils and work areas. (Boil out/ CIP)
- Support MSS
- When the oil technician is not working with oil processes, they should be cross trained to support kitchen operations.
Assist with other tasks as assigned by supervisor
