What are the responsibilities and job description for the Cook III position at Soboba Casino?
Responsible for maintenance, set up, food production and quality control of all meat and other food items prepared in the kitchen. Assists in the training of line cooks and support of kitchen staff.
Duties/Responsibilities
- Follow standard recipes for menu items.
- Prepare and present all foods in accordance to standard recipes and as specified by the guest.
- Participate in menu item planning, prep and presentation.
- Oversee food preparation and kitchen staff to ensure quality production and assist with ordering needs and placing orders through onsite requisitioning system.
- Visually inspects, selects and uses only food items of the highest quality in the preparation of all menu items.
- Perform routine cleaning of kitchen equipment.
- Keep all refrigeration, storage, and working areas in clean, working condition to comply with health department regulations.
- Ensure all equipment in working areas is in proper working condition.
- Operate and maintain the cleanliness of the various equipment needed to prepare and serve menu items.
- Provide training for new team members.
- Responsible for passing along shift information to oncoming Line Cooks.
- Learn the process of month end inventory.
- Assists with necessary disciplinary action and coaching of line staff.
- Contributing to schedules.
- Delegate tasks as needed to team members.
- Delegate side work and ensure all items are completed and rotated fairly.
- Assist leadership in daily break schedule and station rotations.
- Good working knowledge of the fundamentals of cooking.
- Good working knowledge of accepted standards of sanitation.
- Knowledge of operating all kitchen equipment, i.e., stoves, ovens, broilers, slicers, steamers, etc.
- Keep work stations and inventory stocked and organized.
- Participate in special events and banquets.
- Follow standard department and Casino policies and procedures.
- Maintain cleanliness and sanitation of food outlets according to Soboba Casino Resort standards and Indian Gaming Health regulations.
- Must be physically present to work a regular, reliable, and predictable work schedule in accordance with business demands, and maintain a consistent and regular attendance record.
- Perform special projects and other responsibilities, tasks, or duties as requested.
Supervisory Responsibilities
- Assist Management in monitoring training of new team members to help them achieve higher status.
- Assist Management to monitor and enforce company and departmental safety policies, health department, and all other applicable.
- Assist in daily operation of the all food outlets as needed. Provides all line staff with the necessary tools and equipment for safe food handling.
- Assist in planning, preparing and serving of all food items and menus. Train staff on the execution of said items.
- Protects the assets of Soboba Casino Resort and preserves confidentiality and integrity when accessing team member information maintained in departmental files / systems.
Education / Qualifications
- Must be 21 years of age, or older.
- Associates Degree in Culinary Arts, considered a plus but not required.
- Minimum three (3) to four (4) years of food preparation experience, required
- Minimum three (3) to four (4) years of line experience in a kitchen, required
- Knowledge of knife use and safety, required
- Knowledge of various kitchen equipment, required
- Knowledge of basic computer skills and programs
- Any combination of education, experience and training that provides the required knowledge, skills and abilities.
- High School Diploma or GED equivalent Preferred.
- Must be able to provide evidence of eligibility to work in the United States of America.
Certificates, licenses and registration
- Ability to obtain and maintain a valid Soboba Tribal Gaming Commission license.
- Required to submit to and obtain negative results on all drug and/or alcohol testing.
- Required to have a valid Riverside County Food Handlers’ Card and/or ServSafe Certification or obtain upon hiring.
