Job Description Summary

The Executive Chef sets the tone for Sonesta’s Culture of Caring. We expect leaders to focus on creating amazing moments for guests and team members while digging deep to find ways to create success for their team.

Accountable for overall success of the daily kitchen and F&B operations. Exhibits culinary and F&B talents by personally performing tasks while leading the staff and managing all food related functions. Works to continually improve guest and employee satisfaction while maintaining the operating budget. Supervises all kitchen and F&B areas to ensure a consistent, high quality product is produced. Responsible for guiding and developing staff including direct reports. Must ensure sanitation and food standards are achieved.

Job Description

  • Leads shifts while personally preparing food items and executing requests based on required specifications.
  • Estimates daily production needs on a weekly basis and communicates production needs to F&B personnel daily.
  • Supervises and coordinates activities of cooks and staff engaged in food preparation for banquets and F&B outlets.
  • Reviews and adjust systems and procedures in the kitchen to ensure their effectiveness.
  • Develops, designs, or creates new menus and recipes based on standards and financial effectiveness with the expectation that food cost is at or below budget.
  • Demonstrates knowledge of high quality food products, presentations, and flavor.
  • Ensures compliance with food handling, sanitation standards, laws, and regulations.
  • Follows proper handling and right temperature of all food products.
  • Knows and implements brand’s Safety Standards.
  • Manages kitchen shift operations and ensures compliance with all Food & Beverage policies, standards, and procedures.
  • Maintains purchasing, receiving and food storage standards.
  • Operates and maintains all department equipment and reports malfunctions.
  • Supports procedures for food & beverage portion and waste controls.
  • Develop and implement environmentally friendly processes and procedures for food preparation, energy use and waste management in the restaurant.
  • Checks the quality of raw and cooked food products to ensure that standards are met.
  • Assists in determining how food should be presented and creates decorative food displays.
  • Leads the F&B team ensuring consistent feedback, accurate scheduling, up to date training, and Sonesta brand standards are met.
  • Assists as needed in the interviewing and hiring of Sonesta team members with appropriate skills for the entire F&B department.
  • Manages day-to-day operations, ensuring the quality, standards and expectations of the customers and employees are met on a daily basis.
  • May serve as Manager on Duty or perform other duties as assigned.
  • This position is a member of the executive committee and as such will be required to complete monthly P&L commentary, scheduling, forecasting, purchasing and prepare the budget among other EC responsibilities.
  • Other duties/responsibilities as assigned.


Qualifications And Skills

Completion of a degree or certificate in culinary arts and five years of experience as a chef, with at least one year in a supervisory capacity, or equivalent combination of education and culinary/kitchen operations experience. Banquet operations and FOH F&B leadership experience is also required. ServSafe certifications required.

This job requires ability to perform the following:

  • Carrying or lifting items weighing up to 50 pounds.
  • Moving safely about the kitchen.
  • Handling food, appliances, products, and utensils.
  • Bending, stooping, kneeling.
  • Attend and participate in BEO meetings.
  • Computer skills.


Other:

  • Communication skills are utilized a significant amount of time when interacting with others; demonstrated ability to interact with guests, employees and third parties that reflects highly on the hotel, the brand and the Company.
  • Reading and writing abilities are utilized often when completing paperwork and management reports, ordering and receiving inventory, and giving and receiving instructions.
  • Mathematical skills, including basic math, budgeting, profit/loss concepts, percentages, and variances are utilized frequently.
  • Problem solving, reasoning, motivating, organizational and training abilities are used often.
  • Alcohol awareness certification and/or food service permit or valid health/food handler card as required by local or state government agency.
  • Will be required to work nights, weekends, and/or holidays.


This position will report to the General Manager.
