POSITION: Dietary Director

SUPERVISOR: Administrator

Must be certified by the State of New Mexico as a Dietary Manager(Preferred)

$26.00 Per Hour DOE
SHIFT: Monday thru Friday, 8:00 am to 4:30 pm

Coverage as needed

Hourly pay

PURPOSE: To perform a variety of duties necessary to assure and oversee that all of the needs of the dietary department are successfully met. To ensure that nutritional meals are consistently provided

QUALIFICATIONS:

To perform this job successfully an individual must be able to perform all essential duties and responsibilities satisfactorily. Individuals must be at least 18 years of age, have a high school diploma or GED, have a minimum of 5 years experience in health care food service, and have 2 years experience in supervising. Must have current certification as Food Service or Dietary Manager as well as Safe Serve certification. Individuals must be able to prioritize multiple demands and maintain professional courtesy at all times. Individuals must be able to maintain excellent attendance and must be neat and clean in appearance at all times.

ESSENTIAL DUTIES AND RESPONSIBILITIES:

The duties of a Dietary Supervisor will include the following but in no way does this description imply these are the only duties to be performed. You will be required to follow other instructions and to perform other duties upon the request of your supervisor that are essential to fulfill the purpose of the Dietary Supervisor position.

  • Wear proper uniform and name tag
  • Know and follow facility policies and procedures
  • Attend all in-services as scheduled and abide by them
  • Respect the rights and dignity of the residents at all times
  • Oversee dietary staff and ensure they follow facility policy and procedures as well as state and federal regulations
  • Ensure employees are working in a safe and clean environment
  • Provides a bi-weekly schedule that covers all shifts and cover any shift as needed
  • Assist in the hiring process of Dietary staff including interviewing of potential new hires
  • Ensure all new hires are trained
  • Know and follow all department sanitation and storage procedures
  • Develop a staffing pattern to meet needs of patients on a 24 – hour basis.
  • Ordering food per weekly menus
  • Maintain a monthly budget per census and month
  • Conduct monthly in-services
  • Ensure that food is served and stored at correct temperatures and that documentation of such is done accordingly
  • Ensure that all food is nutritional and appearance is appetizing
  • Ensure all equipment is clean, sanitized and in good working conditions
  • Have knowledge of all diets
  • Report any equipment breakdown to the appropriate department
  • Update snack list and print labels
  • Recommend residents to therapy as needed
  • Interview residents for food choices
  • Prepare nutritional assessment, care plans, and MDS
  • Refer residents to Registered Dietician as needed
  • Represent dietary department in meetings as necessary
  • Chart all dietary changes immediately
  • Record monthly and weekly weights
  • Contact POA with all changes in weight, intake and interventions (supplements, etc.)
  • Assist in other areas as requested

PHYSICAL DEMANDS:

The physical demands described here are representative of those that must be met by an employee to successfully perform the essential functions of this job. While performing the duties of this job the employee is regularly required to stand and walk for short distances. Must be able to use hands to handle or feel objects, tools and/or controls. The employee is occasionally required to reach with hands and arms. Must have the ability to work long hours as needed and to perform all job tasks that involve the Dietary Department. The employee must regularly lift and/or move up to 10 pounds and occasionally lift and/or move up to 40 pounds.

WORK ENVIRONMENT:

The work environment characteristics described here are representatives of those an employee encounters while performing the essential function of this job. Reasonable accommodations may be made to enable individuals with disabilities to perform the essential functions. The employee will work in a clean, well lit, heated and ventilated area. Kitchen area may be warm, humid and floors may be slippery due to spilled liquids or foods. Refrigerated areas will be cold. Employees may be subject to injury from cutlery, to burns from hot equipment, utensils and hot foods.
