General Description:
The Culinary Academy of Las Vegas (CALV) is the country’s leading nonprofit culinary and hospitality training institute. CALV’s mission is to train people for successful hospitality careers in Las Vegas. CALV’s vision is to reduce poverty and eliminate unemployment by providing youth, adults, and displaced workers employability and vocational skills.
The Chef provides leadership, training, and hands-on management of the kitchen staff. The candidate must be proficient in various cooking techniques, a knowledge of Food and Labor cost management, and provide quality and consistent products to our guests.
The Chef will be responsible for ensuring that the Professional Cook students are receiving real-world experiences in CALV’s operations. The candidate will be expected to take on numerous student success-related responsibilities and challenges.
Essential Functions:
- Ensure a safe environment for students to work and develop
- Provide mentoring and coaching for the students
- Help with the coordination of student work during scheduled applied times.
- Follow all directions of the Director of Culinary Operations
- Ensures that the standards of quality and service are maintained at the brand level.
- Instill and demonstrate proper cooking techniques for students and staff
- Development of menu ideas, including seasonal changes and specials

Manage all aspects of daily operations under their control
- Continued development of staff through mentoring, coaching and positive reinforcement
- Maintain the Quality and consistency of all food preparation and presentation.
- Maintain cost controls through proper scheduling, ordering and waste management
- Maintain and enforce all state and local health regulations and CALV requirements.
- Ability to Multi-Task in an ever-changing environment
- Show patience and compassion towards students, staff, and guests
Minimum Qualifications:
High school diploma or equivalent AND four (4) years of related experience and/or training. Two (2) years of teaching or training experience. Experience working with diverse learners, basic computer skills, including use of Microsoft Office, Eatec (ordering), and ADP (payroll) (preferred).

- Valid driver's license
- SNHD Food Handlers Card
- Must be able to show proof of insurability on vehicles
- ServSafe Food Handler Certification (preferred)
