The Dietary Director is responsible for overseeing the entire food service and nutrition program in a healthcare or long-term care facility. This role involves managing the dietary team, developing nutritious meal plans that meet residents' dietary needs, and ensuring compliance with state and federal regulations. The Dietary Director plays a key role in enhancing the quality of life for residents through nutritious meals, special diets, and fostering a positive dining experience.

Key Responsibilities:

  • Department Management:

    • Lead, manage, and supervise the dietary team, including cooks, dietary aides, and other food service staff.
    • Oversee the recruitment, training, scheduling, and performance management of dietary personnel.
    • Ensure compliance with facility policies, health regulations, and safety standards in all kitchen operations.
  • Menu Planning and Nutrition:

    • Develop and oversee nutritionally balanced menus that meet the specific dietary needs of residents, including those with medical restrictions (diabetic, low-sodium, gluten-free, etc.).
    • Collaborate with healthcare providers such as dietitians, nutritionists, and nursing staff to ensure menus align with residents' medical care plans.
    • Adjust menus as needed based on seasonal availability, resident feedback, and nutritional guidelines.
  • Food Safety and Sanitation:

    • Ensure compliance with all local, state, and federal regulations related to food safety, sanitation, and meal preparation.
    • Implement and maintain a strict sanitation schedule for kitchen cleanliness, equipment maintenance, and food storage.
    • Conduct regular inspections of food preparation areas to ensure safety standards are met.
  • Budget and Inventory Management:

    • Develop and manage the dietary department budget, including food costs, labor, and supplies.
    • Order and maintain food and kitchen supplies, ensuring high-quality ingredients and cost-effective purchasing.
    • Monitor inventory levels and implement proper stock rotation to minimize waste and ensure food freshness.
  • Resident and Family Engagement:

    • Work closely with residents and their families to accommodate food preferences, dietary restrictions, and specific nutritional needs.
    • Address any dietary concerns or complaints and resolve them promptly and professionally.
    • Promote a positive dining experience through the creation of enjoyable, nutritious meals and a welcoming dining environment.
  • Compliance and Documentation:

    • Ensure the dietary department is compliant with all health, safety, and sanitation regulations, including record-keeping for inspections and audits.
    • Maintain accurate records of residents' dietary needs, meal plans, and preferences.
    • Prepare for regulatory inspections, ensuring all aspects of food service operations meet state and federal requirements.
  • Special Events and Programs:

    • Plan and coordinate special meals, events, and celebrations for residents, such as holiday dinners and themed meals.
    • Work with the activities department to support social and recreational programs that include dining events.
  • Education: Bachelors degree in Dietetics, Nutrition, Food Service Management, or a related field is preferred. Certification as a Certified Dietary Manager (CDM) or Registered Dietitian (RD) is highly desirable.
  • Experience: Minimum of 3-5 years of experience in food service management, preferably in a healthcare or long-term care setting. Previous supervisory experience required.
  • Skills:
    • Strong leadership and team management skills.
    • In-depth knowledge of dietary regulations, nutrition, and special diets for healthcare settings.
    • Excellent communication and interpersonal skills.
    • Ability to manage a budget, control costs, and optimize resources.
    • Proficiency in menu planning and food service operations.
    • Familiarity with food safety and sanitation guidelines.
