This role will be located at one of Discovery Land Company’s locations: Silo Ridge Field Club, set outside of Amenia, New York.
Silo Ridge Filed Club is seeking a Baker to join the Food and Beverage Culinary Department.

The Baker will play a vital, supporting role on the culinary team by assisting with baking and pastry preparation, deliveries, and kitchen cleanliness. The Baker will work with a range of ingredients and baking styles, so a diverse knowledge and passion for both pastry and baking is encouraged. Reporting to the Pastry Chef, the Baker will work with all members of the culinary team in the creation of unique and fun dining experiences. In this role, you will be part of creating the Discovery Land Company experience for our members and fellow employees.

Key Responsibilities

The Baker is responsible for creating a wide variety of delicious baked goods, including artisan breads, pastries, cakes, and desserts. Exceptional attention to detail, creativity, and dedication to quality contribute to the overall success of the operation and enhances the dining experience for customers. 

• Prepare and bake a diverse range of high-quality bread, pastries, cakes, and desserts according to established recipes and standards.
• Measure and mix ingredients to form dough or batter, ensuring accurate measurements and consistent results.
• Follow proper fermentation, degassing, proofing and baking techniques. 
• Responsible for scaling and shaping all breads, loaves, and pastries.
• Monitor baking process to ensure proper temperatures, cooking times, and overall quality.
• Develop and execute creative and innovative baked goods to enhance the menu and appeal to members and guests.
• Collaborate with the culinary team to plan and coordinate daily production schedules.
• Ensure compliance with all health and safety regulations regarding food handling and sanitation.
• Maintain inventory of baking ingredients and supplies, and place orders as needed.
• Stay updated on industry trends and new techniques in baking, incorporating them into menu development and production.
• Train and mentor other team members, providing guidance and support to foster their growth and development.
• Maintain a clean and organized bakery area, including equipment, utensils, and workstations.

Skills & Qualifications

• A minimum of 5 years’ baking experience experience in a high-end restaurant, hotel, or cruise-ship environment with exposure to various catering styles and services (e.g. a la carte, buffet) is required
• 3-5 years Bread baking experience
• In-depth knowledge of fermentation, degassing, proofing, baking techniques, ingredients, and equipment.
• Experience working with laminated dough, pizza dough, sourdough, etc.
• Strong understanding of different types of flour, yeast, sweeteners, and other baking ingredients.
• Ability to follow recipes accurately and consistently while also demonstrating creativity and innovation.
• Exceptional attention to detail and the ability to maintain consistent quality standards.
• Excellent time management skills with the ability to prioritize tasks effectively.
• Strong communication and interpersonal skills to collaborate with other team members.
• Ability to work in a fast-paced environment and handle multiple orders simultaneously.
• Flexibility to work early mornings, evenings, weekends, and holidays as required.
• Formal culinary or baking education is a plus.
• High School diploma, GED or equivalent vocational training with job-related courses (preferred).
• Ability to chop, prepare, or cook food items and a familiarity with a range of cooking techniques.
• Understand and abide by all federal, state, and local food safety and sanitation regulations, including state required food handler certificates.
• Must have previous experience in a leadership position

Additional Requirements

• Must be able to work flexible work hours/schedule including evenings, weekends, and holidays. Long hours may be required due to business demands.
• Positive attitude, professional demeanor, and exceptional communication and interpersonal skills to deliver service to members, guests, and team members.
• Ability to work in a team environment.
• Ability to stay calm and focused during the busiest of times.
• Ability to read, write, speak, and understand English; additional languages preferred.
• Ability to meet the physical demands of the position including, but not limited to, working indoors and outdoors in all weather conditions, standing, walking, and moving for periods of greater than eight (8) hours, and lifting and carrying items sometimes greater than fifty (50) pounds.
