Pay range is $22.297- $31.854/hour PLUS an additional $3.00/hour facility differential for hours worked. Pay rate may be commensurate with education and/or experience within fiscal constraints, if approved.

DUTIES:
This position will manage and supervise staff, food preparation, serving procedures and safety and sanitation associated to the kitchen/dining room work areas.
Plan menus and standardize recipes for a large number of meals, including special occasion or special diet menus; ensure menus are being followed and give suggestions to staff and inmate workers to help improve and expedite work.
Procure meats, staples, and other supplies through the central warehouse or supply area and supervise the storage of foods.
Estimate needs; maintain food purchase and consumption records; supervise periodic inventories.
Train staff and inmate workers; maintain personnel records; make progress and performance reports on subordinate employees.
Requirements/Qualifications
Minimum Qualifications: Bachelors degree from an accredited University with emphasis in Foods and Nutrition, Institutional Management or a related area OR post-high school coursework/training in related area plus four years experience in food service activities, one of which was in a responsible supervisory or management capacity.
Preferred Qualifications: Experience with managing large-scale food service operation using food service production techniques and sanitation standards. Experience working with medical and religious diets. Experience in maintaining physical and computerized inventories.
Other: Transcripts required prior to appointment. Applicants accepting a job offer must pass the following pre-employment exams the medical exam, and at a randomly announced time, pass a drug test. Once at the Staff Training Academy, must successfully complete the fully paid NE Corrections Training Program to include CPR, first aid and self-defense tactics.
Knowledge, skills and abilities
Knowledge of state sanitation standards for food service operations, all food service techniques, and supervisory techniques/practices. Must be able to work weekends and holidays. Duties may include prolonged standing, walking and climbing stairs.
