The Department of Corrections is seeking a highly motivated and qualified individual for the position of Food Service Manager 1 at Clallam Bay Corrections Center.
Clallam Bay Corrections Center is a 900-bed male facility located on the point of the Olympic Peninsula. It is 50 miles west of Port Angeles and looks out over the Strait of Juan de Fuca at Vancouver Island. This facility houses medium and close custody incarcerated individuals. CBCC also operates a Restricted Housing Unit.
Whether the work is inside a prison, in community corrections, or incarcerated individuals can learn to make choices that contribute to a safer society.
Duties
Typical duties of a Food Service Manager 1 include but are not limited to:
- Supervise A/C Cook staff and incarcerated individuals in preparation of breakfast, lunch and dinner meals.
- Ensure that meals are prepared according to recipes and proper quantities are prepared for current population.
- Ensure that proper sanitation, food handling, safety. health and security practices are maintained.
- Ensure all HACCP requirements are appropriately documented by the A/C Cook staff.
- Create and maintain a work schedule for all A/C Cooks, to include annual vacations and sick absences in collaboration with Food Service Manager 5.
- Perform monthly supervisory conferences (PMI) and timely annual evaluations.
- Plan the food service day's activities to ensure all required needs are met and expectations are understood by A/C Cooks and communicated to incarcerated workers.
- Create purchase orders for all food service needs. Ensure that all possible items that are available through Correctional Industries (Cl) are purchased through Correctional Industries.
- Minimize food waste by monitoring menus, production plans and portion controls utilizing progressive cooking methods.
- Track preparation waste, food served waste, and compost waste.
- Update menus to ensure the state menu requirements are met.
- Coordinate with Job Coordinator regarding all issues related to incarcerated worker placement for Food Service Department.
- Ensure quality control is maintained for the food served to the incarcerated population.
- Attend and Participate in Meetings/Planning/Events.
- Proactively solicit input and resolve issues with stakeholders and build positive relationships between disciplines, programs and departments.
Qualifications
Required:
High School Diploma or equivalent- One (1) year using inventory counting/control processes to place product orders with multiple vendors.
- Two (2) years supervising staff or one year as a Cook AC in a correctional facility.
Preferred/Desired Qualifications:
3 years supervising staff in a culinary setting to include performance reviews, discipline, and ordering of food equipment.
