Key Responsibilities:
Supervision of Dietary Staff:
- Lead, supervise, and train dietary staff, including cooks and dietary aides, ensuring efficient and high-quality meal service.
- Create work schedules for the dietary team, ensuring appropriate staffing levels for all shifts and meal services.
- Monitor staff performance, conduct evaluations, and provide coaching to ensure adherence to facility standards and policies.
- Assist in hiring and onboarding new dietary team members.
Meal Preparation and Service:
- Oversee the preparation and serving of meals, ensuring that food is served on time and meets residents dietary needs and preferences.
- Ensure compliance with dietary guidelines, including special diets for residents with medical conditions such as diabetes, hypertension, or food allergies.
- Monitor portion control and food presentation to ensure a high standard of quality.
Food Safety and Sanitation:
- Ensure compliance with all local, state, and federal regulations regarding food safety, sanitation, and hygiene.
- Implement and maintain proper food handling procedures, including temperature control, storage, and cleaning protocols.
- Conduct regular inspections of the kitchen, dining areas, and food storage areas to ensure cleanliness and safety.
Menu Planning and Nutritional Compliance:
- Assist with menu planning in collaboration with the Dietary Director or dietitian to ensure that meals meet residents nutritional needs.
- Modify menus as needed to accommodate seasonal changes, resident preferences, and special dietary requirements.
- Ensure that all meals meet regulatory guidelines for nutrition and portion sizes.
Inventory and Supply Management:
- Oversee the ordering and stocking of food supplies, ingredients, and kitchen equipment, ensuring that necessary items are available for meal preparation.
- Monitor inventory levels and conduct regular inventory checks to prevent shortages or overstocking.
- Work with vendors to ensure timely deliveries and maintain relationships with suppliers.
Resident and Family Communication:
- Respond to inquiries and concerns from residents and families regarding dietary services, addressing special requests and preferences.
- Collaborate with nursing staff and other departments to ensure dietary needs are aligned with residents care plans.
- Communicate regularly with residents to gather feedback and improve the dining experience.
Compliance and Documentation:
- Maintain accurate records of dietary services, including meal counts, inventory levels, and staff schedules.
- Ensure that all documentation related to food safety and compliance is up to date and readily available for inspections.
- Prepare for and participate in regulatory surveys and inspections, ensuring the department meets all applicable standards.
- Education: High school diploma or equivalent required. Certification in Food Service Management or Dietary Supervision is preferred.
- Experience: Minimum of 2-3 years of experience in food service, preferably in a healthcare or long-term care setting. Previous supervisory experience is required.
