Maintenance Mechanic

JOB DESCRIPTION

Stellar Snacks is seeking an experienced Pretzel Maker/Apprentice with the following qualifications:

LEVEL 1:

•        Ability to navigate operator interface terminals for Oven, extruder and mixer.

•        Knowledge of how to do piece weights and how to adjust extruder to achieve proper piece weights while monitoring the pressure at the extruder head.

•        Knowledge of how to perform moisture test.

•        Knowledge of how to fill out all required paperwork.

•        Ability to disassemble and reassemble extruder and perform sanitation on extruder, ingredient feeder and mixer.

•        Know how to empty sifter tailing bucket.

•        Knowledge of how to replace the blade on the bandcutter, clear the alarms, home the bandcutter and restart.

•        Know how to adjust loaf size on mixer.

•        Ability to drive a forklift.

•        Know how to change Malt, Oil and Caustic totes.

•        Know how to clean the cooker.

•        Know how to empty salter and clean. 

LEVEL 2 operator requirements.

•        All of Level 1 requirements.

•        Ability to adjust oven to correct for moisture issues.

•        Ability to adjust Kiln Belt, to correct tracking.

•        Ability to adjust the mixer to correct for texture issues with the dough.

•        Ability to do a changeover without assistance from management. How to properly load oven and mixer profiles. Ensure that all proper ingredients are added and set to proper set points.

•        How to adjust transfer points from proofer to cooker and cooker to oven.

•        How to clean and replace filters on combustion blowers.

•        How to change the blade on the Guillotine and adjust the sweep properly for the product that is running.

•        How to change the fingers on the Bandcutter and adjust the fingers for proper operation.
