We are seeking a dedicated and passionate Cook/Smoker Operator to lead our culinary team managing a custom meat smoker and a 8' X 32' climate controlled food trailor at an established site with an esablished and proven menu.
The ideal candidate will have experience in smoking meats, food preparation and a strong understanding of food safety and handling practices by ServeSafe guidelines. This role is essential in delivering high-quality meals that meet our dietary standards and cater to our diverse clientele. The Cook/Smoker Operator will be responsible for smoking/storage of meats, preparing dishes, and ensuring that all food is prepared to the highest standards of quality and presentation.
The candidate must be capable of recruiting, and managing staff as well as tracking and managing food inventory.
This position additionally has the potential to grow into an extensive catering and delivery lucrative business.
Duties
- Smoke and store various meats
- Prepare and cook a variety of dishes according to established recipes and dietary guidelines.
- Maintain cleanliness and organization in the kitchen and smoker, adhering to food safety regulations.
- Monitor food inventory levels and assist with ordering supplies as needed.
- Collaborate with the dietary requests to accommodate special dietary requests or restrictions.
- Ensure all food is presented attractively for quality dining experiences
- Participate in catering and delivery events as required, ensuring all aspects of food service are executed smoothly.
- Supervise, train and mentor junior kitchen staff on proper cooking techniques, cleanliness, meal assemblies, presentations and food safety practices.
Qualifications
- Must be or become ServeSafe certified.
- Must have skills operating a meat smoker.
- Proven experience as a Cook or in a similar role within a culinary environment.
- Knowledge of food safety standards and best practices in food handling.
- Experience with catering is preferred.
- Excellent organizational skills and attention to detail.
- Ability to work efficiently under pressure in a fast-paced environment.
- Abiloity to manage kitchen and food service staff.
- Ability to plan ahead, inventory and order food/food storage products.
- A passion for cooking and commitment to delivering high-quality meals.
