Job Overview
We are seeking a Culinary leader to run our Meat Department! We are a locally owned market and butchery. The ideal candidate will have experience in purchasing, meat cutting and culinary arts experience.
Responsibilities
- Help in the carving and packaging of meat products with precision and efficiency as well as training meat dept staff in the cutting and packaging of meat.
- Ensure proper packaging of meat products for presentation and storage
- Adhere to food safety standards and regulations
- Provide excellent customer service by interacting with patrons during meat carving demonstrations
- Adjusting retail prices based on cost of goods, yields and waste
- Managing your departments P&L statement, controlling food cost, labor cost & purchases
- Work a mixture of during the week & weekends, including mornings and nights for 45-50 hours per week.
Skills
- Proficient in using kitchen knives for meat cutting
- Experience & understanding of how to purchase goods on a budget and how to read a profit and loss statement
- Experience in food handling and production
- Knowledge of food safety practices
- Previous experience in a grocer, butcher shop, restaurant or culinary environment is a plus
- Strong customer service skills to engage with guests during carving demonstrations
