Job Summary:

STK Steakhouse, part of The ONE Group, is seeking a highly talented and innovative Chef de Cuisine to lead our kitchen operations and maintain the exceptional culinary standards that define the STK brand. The Chef de Cuisine will be responsible for overseeing the preparation, quality, and execution of all menu items, managing kitchen staff, and ensuring compliance with California’s health, safety, and labor regulations.

Key Responsibilities:
  • Lead and manage daily kitchen operations, ensuring that food quality, presentation, and flavor are always consistent and exceptional.
  • Develop and execute creative, seasonally appropriate menus that align with the STK brand while incorporating local ingredients and culinary trends.
  • Train, supervise, and evaluate kitchen staff, fostering a collaborative and respectful work environment.
  • Ensure strict adherence to California food safety and sanitation standards, implementing policies and procedures to maintain a safe and compliant kitchen.
  • Oversee food inventory, ordering, and cost control, minimizing waste and managing expenses in line with budgetary goals.
  • Create staff schedules in compliance with California labor laws, ensuring that meal and rest breaks are properly observed and documented.
  • Enforce workplace safety protocols, ensuring that all kitchen equipment is properly maintained and that staff adhere to safety guidelines.
  • Collaborate with the management team to deliver a seamless dining experience, addressing any guest concerns promptly and professionally.
  • Act as a role model for professionalism, inspiring and motivating the team to achieve culinary excellence.
  • Stay informed about industry trends and innovations, implementing new techniques and menu ideas to keep the STK experience fresh and exciting.
Qualifications:
  • A minimum of 5 years of culinary experience in a high-volume, upscale restaurant, with at least 2 years in a leadership role.
  • Extensive knowledge of cooking techniques, menu development, and quality control standards.
  • Proven leadership skills with the ability to train, motivate, and manage a diverse team.
  • In-depth understanding of California health and safety regulations, as well as labor laws pertaining to scheduling, overtime, and employee breaks.
  • Strong organizational and multitasking abilities, with a keen attention to detail.
  • Food Safety Manager Certification required as per California law.
  • Excellent communication and problem-solving skills, with a passion for delivering a superior dining experience.
Physical Requirements:
  • Must be able to work in a kitchen environment, which may involve exposure to heat, steam, and cold.
  • Ability to stand and move for extended periods and lift items weighing up to 50 pounds.
  • Flexible schedule, including the ability to work nights, weekends, and holidays as needed.
