Position Summary:
Straight to the Plate Catering is seeking a results-driven Managing Chef to operate the kitchen in our rapidly growing operation. As a high-volume catering company, we are seeking someone who is not only a master at a variety of cuisines but also has unparalleled organization, communication and management skills.
Our ideal candidate excels in a fast-paced environment, able to manage multiple multi-faceted menus and every component of the daily catering operations including management of the culinary team. Through a passionate and detail oriented demeanor, the Managing Chef will set the tone for the entire culinary talent to keep our clients as top priority and exceed their expectations.
Key Areas of Responsibility:
· Recruit, train, schedule, and retain culinary staff for production and event execution
· Maintain allotted payroll targets and food cost targets
· Develop menus and recipes, to include food costing
· Develop and maintain systems to streamline operations and profitability
· Manage inventory, cost controls, and purchasing of all kitchen products
· Maximize kitchen productivity and support standard food safety and handling practices
· Model and practice the core values of our company culture by leading by example
Qualifications & Requirements:
· Minimum of 4 years experience in high volume fine dining restaurant, hotel, country club, or catering firm as a Lead Chef
· Valid Driver's License is required
· ServSafe Food Safety Manager Certification
· Comprehensive knowledge of county health department rules for both catering and food production operations.
· Skill in artistic plate presentation and a passion for culinary trends is a must
· Catering background is preferred
· Working Knowledge of Microsoft Office
· Availability to work long hours, to include nights, weekends, and holidays
