OVERNIGHT PRODUCTION MANAGER
Sullivan St. Bakery is seeking an Overnight Production Manager to join our Team! The ideal candidate will own the entire bakery planning process from inventory management of supplies, through production list, execution of production list, quality control, and distribution. You will strategize and plan with the wholesale team, baking team and take leadership of the entire production process. We are a 7-days a week 24 hours a day so your work hours must be flexible. Plan and meet daily production goals, while tracking efficiency and identifying areas of improvement are key components for your success in this position.
Responsibilities:
- Manage and evaluate entire production process from support the planning of production, packing schedules, baking and delivering routes to ensure all client orders are fulfilled to our quality standards
- Collect data on quality, yield, labor input, climate control, waste, and other relevant metrics for improving efficiency and reducing costs in order to develop, improve and implement processes
- Tracking inventory and ordering for all production supplies
- Contribute to budgeting
- Ensure quality and cleanliness metrics are always kept to maintain a safe and sanitary production environment
- Team Management, Training and Development
- Develop and manage staff scheduling and daily tasking; serve as the first line of defense in troubleshooting production issues and resolve staff conflicts if they arise
Requirements & Qualifications:
- Prior experience in Baking or Culinary related production is preferred
- Prior management experience to include training, staffing and personnel management is also required
- Strong organizational and managerial skills as well as sound computer skills such as creating and managing worksheets and planning schedules is critical
- Demonstrate excellent communication skills (written and verbal)
- Desirable bachelor’s degree in hospitality
- Availability to work an early morning shift schedule is a MUST
- Ability to work in a fast-paced environment with a high level of attention to detail.
- Ability to follow procedures and take directions, work as a team player.
- Ability to work flexible hours, including evenings, weekends, and holidays.
- Ability to lift and carry up to 50 lbs.
- Constant standing, walking, bending, reaching, and repetitive motions.
-Manage production lines under tight deadlines
-Help improve the systems of how we count all of the pieces of bread baked.
-Must be a natural problem solver
-Support the head baker by managing the production line of bread and special orders
-Own the timing and coordinate with all departments
-Double check all of the recipes in production, especially the dough mixes
Oversee Quality – dough quality, proofing quality, bake quality, shaping and timing
-know what qualifies as perfect bread
-Be organized, and organize the production, the distribution, and the maintenance
-Manage the staff and find coverage for people calling out sick
Salary : $80,000 - $85,000
