Job Summary
The Special Diet Coordinator is responsible for all aspects of special diets served to children in the day program. This includes meal preparation, documentation, classroom training and compliance within the scope of USDA guidelines.
Essential Duties and Responsibilities:
1. Perform daily, the activities of menu development and meal prep for children who require special diets as prescribed in child’s medical plan.
2. Work in collaboration with the nursing department to complete required documentation as needed, for special diet requests.
3. Modify menus/recipes meeting the special dietary needs, while making every effort to be consistent with the non-restricted menus.
4. Maintain up to date knowledge on the dietary needs of each classroom.
5. Determine quantities of food items required for meal prep in adherence to CACFP guidelines, number of children being served and relating to portion size.
6. Ensure that meals being served reflect high quality flavor and appearance.
7. Complete required CACFP logs, daily production reports, and other documentation.
8. Work as a cooperative member of the nutrition team, contributing to the success of the department and promoting positive interactions with team members, students, parents, and funding agency personnel.
9. Maintain established standards of sanitation, safety, food storage and handling practices in compliance with local and state health departments.
10. Meet the established clothing and hygiene guidelines relating to - a. Footwear b. Head/hair coverings c. Hands/fingernails d. Extra items in the food preparation area Other
Duties and Responsibilities:
1. Participate in grantee monitoring visits.
2. Clean utensils, equipment, and storage, food preparation and serving areas for the purpose of maintaining required sanitary conditions.
3. Check equipment to ensure it meets safety and sanitation requirements and report needed repairs to Kitchen Supervisor.
4. Ensure every work area is well-stocked to allow for expedient and efficient operation.
5. Inventory food, condiments, and supplies for the purpose of ensuring availability of items required for meeting projected menu requirements.
6. Prepare supplemental food and distribute per providers orders.
7. Perform functions of other nutritional services positions, including covering Kitchen Supervisor duties, as needed to ensure adequate staff coverage within food and nutrition services operations.
8. Participate in nutrition education activities, grantee-sponsored trainings, in-service training, workshops, etc. for the purpose of gathering information required to perform job functions.
9. Participate in general staff meetings and other agency meetings as required.
10. Participate in all emergency drills and environmental safety activities.
11. Other duties as assigned that support the mission of Sunshine School.

Qualifications:
1. Education/Experience: Any equivalent combination of training, education, or experience that meets minimum requirements. Experience in child food service/preparation and/or management preferred.
2. Must be at least 18 years of age.
3. Possess basic mathematical skills.
4. Possess reading and writing skills needed to maintain records and read and comprehend written instructions.
5. Background clearance from the Arkansas State Police and Central Registries for Child and Adult Abuse and Maltreatment.
6. Meet the agency’s requirements for drug screening.
7. Demonstrate an understanding of working safely around stoves and chemicals.
8. Ability to understand and follow multi-step written and oral instructions.
9. Essential physical and mental requirements to perform the duties of this position include: Must be able to work in a constant state of alertness and concentrate for long periods of time. Regularly required to talk or hear and communicate detailed information accurately and effectively to varied individuals/groups. The employee frequently is required to use hands or fingers; handle or feel objects, tools, or controls. The employee is regularly required to stand; walk; sit; reach with hands and arms; climb or balance; and stoop, kneel, crouch. The employee must often lift and/or move up to 40 pounds. Specific vision abilities required by this position include close vision and distance vision. The noise level in the work environment is usually moderate to loud.
Days/Hours: 7 hours a day, Monday – Friday, 7 a.m. – 2 p.m.
This position’s work requirements are based on the annual, in-center staff calendar. Occasional additional days/hours may be necessary to meet the needs of the agency.
