What are the responsibilities and job description for the Sushi Chef position at Sushi Den/ Izakaya Den/ OTOTO?
Job Description
- This is NOT a remote position. Candidates must reside in Colorado and be able to come in for the in-person interview.
- Create a rich sushi menu with various main ingredients and raw fish (for example, salmon, tuna, unagi)
- Prepare all types of sushi, including maki, nigiri, and sashimi
- Select fresh fruits and vegetables to make high-quality dishes (like avocado, mango, and carrots)
- Add additional flavors to sushi rolls with ginger, rice vinegar, wasabi, and soy sauce, when appropriate
- Manage food prep activities, like boiling rice
- Coordinate with our wait staff to ensure proper cooking, considering special requests and food allergies
- Monitor food stock and place orders, as needed
- Recommend new, modern recipes, like sushi burgers
- Maintain hygiene principles in all cooking areas and clean your space at the end of the shift
- Knowledge and/or interests in Japanese cuisine is a must
- 3-5 years’ experience (Required)
- Experience in a fast-paced restaurant environment is a must
- Possess great knife skill
- Able to work in a team and independently with minimal supervision
- Ability to perform any function around the sushi bar
- Must be able to lift 50 lbs
- Authorized to work in the US
- Must be able to work on weekdays, weekends, holidays and at nights
