Job Purpose:
Provides clean dishes and utensils and maintains safe and sanitary kitchens.
Job Duties and Responsibilities:
- Provides kitchen with adequate supply of clean pots, pans, utensils and dishware by scraping, racking, stacking and washing, unloading dishwasher, manually washing items as needed and putting items away when dry to the appropriate area.
- Ensures kitchen safety by organizing soiled pots, pans, and dishes prior to loading them into dishwasher, mopping and cleaning spills, and placing caution signs on wet floors and in hazardous areas according to established procedures.
- Maintains sanitary kitchen and dumpster area by cleaning counters, shelves, walls, ceilings and equipment, sweeping and mopping floors, placing soiled linen and towels into appropriate bins according to established procedures.
- Ensures a clean and orderly storage area by arranging and straightening food products and equipment, wiping shelves and counters, disposing of empty cartons, boxes and trash, and sweeping and mopping storage area floors.
- Complete mandatory training including but not limited to health and safety, as required by the department.
- Ensures chemicals, equipment, and supply costs are within established guidelines by regulating the amounts of chemicals and supplies used, minimizing waste of product, and notifying food service sous chef of needed repairs on defective or damaged machinery and/or equipment.
- Performs other duties as assigned to support the efficient operation of the department.
Job Specifications:
Education and Experience:
Essential:
- County of San Diego Food Handler Card
- CA Driver’s License in good standing
Desirable:
- Dishwashing experience
- Custodial or janitorial experience
Skills and Knowledge:
