Position Overview
We are seeking a highly skilled and passionate Lead Baker to oversee our artisanal bread and pastry production. This role requires a creative and technically proficient professional with experience in high-end restaurant or bakery environments. The Lead Baker will collaborate with our Executive Pastry Chef and culinary team to ensure the highest standards of quality, consistency, and innovation in our bread and baked goods offerings.
Key Responsibilities
- Oversee daily production of breads, viennoiserie, and other baked goods for Atlas’ à la carte and tasting menus.
- Develop and refine recipes to align with Atlas' elevated dining experience.
- Ensure precision in mixing, fermentation, shaping, and baking processes to maintain consistent quality.
- Manage ingredient sourcing, inventory, and cost control while maintaining high-quality standards.
- Train and mentor pastry team members in baking techniques and kitchen best practices.
- Uphold food safety and sanitation standards in compliance with health regulations.
- Collaborate with the Executive Pastry Chef on menu development, seasonal offerings, and creative presentations.
- Work efficiently in a fast-paced, high-pressure environment while maintaining attention to detail.

Requirements
Qualifications & Experience
- Minimum 3 years of professional baking experience in a fine dining restaurant, luxury hotel, or high-end bakery.
- Expertise in traditional and modern bread-making techniques, including natural fermentation, lamination, and specialty grains.
- Strong knowledge of classic and contemporary baking methods, including sourdough, brioche, and viennoiserie.
- Ability to work early morning shifts and maintain a high level of organization.
- Experience leading or mentoring a team in a professional kitchen setting.
- Passion for quality ingredients, seasonal flavors, and culinary creativity.
- Culinary degree or formal training in baking/pastry arts preferred.
