Job Overview:
The Pastry Chef is a culinary professional specializing in the creation of desserts, pastries, and baked goods for Tehama. They are responsible for the entire process, from developing recipes and managing ingredients to baking, decorating, and presenting these items beautifully.
Duties:
- Follow recipe cards to prepare pastries and baked goods.
- Discuss daily events and production schedule with Executive Chef.
- Rotate food in coolers, dry storage and personal mise en place to ensure freshness and reduce waste.
- Clean cooking surface and equipment.
- Assist in placing desserts during large event, buffet, banquets and dinner service
- Set-up mise en place for the next day.
- Assist in every aspect of kitchen production and preparations
- Make daily stocks and soup
- Maintain highest standards of production
- Follow all Health and Safety requirements from State and local authorities
- Responsible for all rotation of dessert production items
- Attend all mandatory department meetings
- Report any quality issue with Executive Chef/ Sous Chef
- Duties as assigned by management
Educational Requirements:
- High School diploma or equivalent required.
- Graduate of accredited culinary program or apprenticeship is preferred
License/Permits:
- Certified Food Handler and Sanitation card.
Required Skills:
- Able to operate typical pastry tools and equipment – knowledge of ingredients and preparation required.
- An understanding of pastry shop operation and ordering ingredients helpful
Previous Experience Required:
- 5 years fine dining pastry production
Physical Demands:
- While performing the duties of this job, the employee is regularly required to talk or hear.
- The employees is frequently required to reach with hands, arms, stoop, kneel, crouch, and/or crawl.
- The employee is occasionally required to walk, sit, use hands to finger, handle, or feel and climb or balance.
- The employee must occasionally lift and/or move up to 50 pounds.
Job Type: Full-time
Pay: $23.75 - $24.85 per hour
Expected hours: No more than 40 per week
