Description General Manager:
A restaurant General Manager oversees all aspects of FOH and BOH. They are responsible for
ensuring that their restaurant is run smoothly, efficiently, and profitably, which often means
making sure that the right people are in the right place at the right time doing the right thing.
The GM works closely with Kitchen Managers, and multiple supervisors.
Controllable:
- Ensuring that stores have proper inventory levels to serve guests and maintain an appropriate
food/paper/chemical costs 24%>
- Ensure that the stores are properly staffed in each department and breaks are given when
appropriate. GM must work to cross train employee in both FOH and BOH.
- GM must get final approval to all new hires, discipline action and terminations from DM.
- GM must control labor costs (store labor costs of 30%>; 12% FOH and 8-10% BOH (depending
on management structure.) All FOH/BOH schedules must be approved by the District
Manager.
- Ensure that plates, glassware, utensils, and equipment are properly stored and cleaned to
prevent loss and breakage
- Vendor management working with GM with any issues or building new relationships. Manage
controllables including but not limited to utilities, linens, chemicals, etc.
Responsibilities:
Cleanliness:
-Ensure that all FOH Areas and BOH Areas being properly cleaned
-Follow-up that all daily/weekly checklists and cleaning lists are being completed and
implemented through Playerlync
-All maintenance request and scheduling all preventative maintenance must be communicated
to DM
-Aesthetic appeal of the interior and exterior including upkeep of landscaping, parking areas,
restrooms, fixtures, lighting, furniture, and decor
-Compliance with guidelines and regulations related to safe food handling, storage, and
preparation
Communication:
- Daily with Supervisors and KM/Kitchen Supervisors
- At least twice a week meeting with DM
- At least once a week with Training Manager/ Auditor
- Weekly HR Manager Director
- Responding promptly HR administration team
- Monthly/Quarterly financial meeting with Accounting and Ownership
-At least once a week with Marketing Coor.
Service:
-Ensure that all positions are meeting the company standards in terms of timeliness and
approach to a guest
-Food presentation, quality and timeliness are up to company standards
-Appearance of every staff member is appropriate including but not limited to clean non-slip
shoes, shirt, pants, hair, etc.
-Staff are looking energetic and upbeat and constantly finding things to do during their
downtimes
-Store management is monitoring and checking in with every department and touching tables
to ensure that every guest has an exceptional experience
Employee Satisfaction and Performance:
-All staff are given clear expectations of their role
-Team members feel supported by management
-Ensure that store management is consistent with following through the employee handbooks
-Constant feedback is given to staff members on opportunities to improve and acknowledging
positive characteristics
-Staff is feeling appreciated and well communicated with new specials or changes in the
operations
- Working with GM to prevent HR issues, Resolving HR issues in a timely manner, and/or
conducting any HR investigations if advised by HR.
-Working with the DM/KM/Supervisor to make sure Steps of Discipline are being followed and
is the final approver of terminations.
-Coaching, verification growing upcoming talent
-Performing Employee Reviews quarterly and provide feedback from DM.
Admin:
- Posting Help Wanted Ad when needed.
-Interviews and hiring: The GM needs to do be conducting the interviews and get approval from
DM all new hires.
-Termination: All terminated employees need to be done by the GM with approval from DM
-Suspension: All suspended employees need to be suspended by the GM with approval from
DM
-Ensuring all new hire paperwork is completed on or before end of employees first day of work.
-Ensuring all employee file/Micros/Playlync/Schedule/PAylocity App are kept up to date
-Ensuring that ALL employees are being offered breaks in a timely manner in the appropriate
time frame. If Employee waivers break ensuring that their waivers have been completed
correctly. Following Guidelines to submit waivers weekly to scaleby3waviers@gmail.com
- Daily and monthly reports completed and submitted in a timely manner.
Money:
-Ensuring all Deposits are made, and Loomis is making Weekly Pick-ups
-Ensuring the Store has the necessary change to get through service weekly
-Informing Ownership if there is a need to withdrawal more funds from Petty
-Informing Ownership if a Store check was written to ensure funds will be in account to cover
check amount
Training:
- Cross Training of team members in multiple positions
- Following Playlync to ensure that training is being properly done
-Team members are being promoted from within as much as possible
- Working with Store Trainers to be looking for/and developing new managers
-Ensure all supervisor are being trained in all aspects of the Restaurant so they are ready to step
into new roles when they become available.
Supervisor:
The GM will be responsible to oversee the KM and 2-5 Supervisors (depend on the Restaurants
structure). The General Manager will need to rely heavily on these individuals to make sure all
aspects of the restaurant are meeting all Food and Safety Standards, and BYC Standards for
Food preparation, presentation, and Service. Please see the Manager Duties that shows a same
of FOH Responsibilities broken down between the GM and 2 Supervisors. Delegating will be one
of the greatest tools to have a successful store.
Tracking:
-Discipline actions
-Manager/Supervisor completed all areas of training and ready for solo shifts
-Check employee Info up to date (all food handlers’ card, ABC permits, Harassment Course etc.)
