Beverage Manager
Overview:
The Beverage Manager will curate an adventurous and classic program for The Central Station Memphis hotel. This role is responsible for the successful operation and administration of all beverage related aspects of the hotel to include: all restaurants, bar/lounges, room service outlets, kitchen, and banquets (if applicable). The Beverage Manager must ensure that the department is continually balanced while focusing on providing an exceptional beverage experience to every guest and maximizing department profitability at the same time. The Beverage Manager is responsible for ensuring that all beverage operations are carried out professionally, to standards and at the highest level of service. The Beverage Manager will achieve desired outcomes by planning, implementing, and controlling effective departmental strategies that drive results and through the creation, development, and maintenance of a competent, motivated, and empowered beverage team. The Beverage Manager will effectively lead, train, coach, motivate, engage, and provide feedback to the restaurant staff, supervisors, and managers daily. The Beverage Manager will serve as the beverage liaison to all hotel departments and corporate partners.
Key Duties & Responsibilities:
- Create and execute curated beverage strategies that will drive the hotel in the lifestyle space and to exceed guest satisfaction and revenues
- Work collaboratively with all members of the corporate food and beverage team in menu planning, development, and execution
- Develop and maintain positive and collaborative relationships with local and national beverage partners
- Ensure beverage staff and management are properly trained to standards and able to carry out the operation
- Work closely with hotel beverage team to develop each person both personally and professionally
- Drive beverage revenues through thoughtful positioning within the market, strategic promotional offerings, and putting in place adventurous and classic beverage programming
- Ensure that all complaints regarding beverage quality and service are investigated and resolved
- Will place beverage orders and schedule/receive beverage deliveries, checking delivery contents to verify product quality, quantity, and agreed-upon pricing
- Lead beverage team to ensure presentation and preparation of beverages exceeds standards
- Maintain payroll records and review financial transactions to ensure that expenditures are authorized and budgeted
- Monitor compliance with health and fire regulations regarding beverage preparation and serving in lodging and dining facilities
- Organize and maintain records required by government agencies regarding sanitation, and beverage subsidies when appropriate
- Establish standards for personnel performance and customer service
- Estimate liquor, wine, and other beverage consumption to anticipate amounts to be purchased or requisitioned
- Review work procedures and operational problems to determine ways to improve service, performance, or safety
- Organize and direct worker training programs, resolve personnel problems, hire new staff, and evaluate employee performance
- Regularly review beverage cost by menu item to ensure cost of goods meets budgeted percentages
- Record and analyze the number, type, and cost of items sold to determine which items may be unpopular or less profitable
- Arrange for equipment maintenance and repairs and coordinate a variety of services such as waste removal and pest control
- Monitor employee and patron activities to ensure liquor regulations are obeyed
- Train workers in beverage preparation, and in service, sanitation, and safety procedures
- Inspect supplies, equipment, and work areas to ensure efficient service and conformance to standards
- Responsible for inventories of all beer, wine, and liquor
Education and Experience:
- At least five (7) years of relevant experience; or any equivalent combination of education and experience that provides the above skills, knowledge, and abilities
- Computer skills required
- Familiarity with Microsoft Office required
- Experience with hotel systems such as MICROS required
