JOB SUMMARY:
- Responsible for overall Dining Room Operation with direct supervision
of all wait staff/DR servers, including their training and performances.
- Direct responsibility to all service and food provisions outside of the production areas, ensuring quality food presentation to the residents in a professional, efficient, and very pleasant/fine dining atmosphere.
- Oversees the buffet operation in relationship to the production staff.
- Assures that all Dining Services protocols and procedures are followed in accordance with established policies.
- Monitors and assists as needed the scheduling of wait staff.
- Maintains Dining room server’s absenteeism, tardiness, and evaluations (with assistance from Assistant Dining Room Manager).
- Responsible for developing in-service and training programs for all DR staff.
- Responsible for sanitation and cleanliness of Dining Room and Buffet Areas.
- Responsible for monitoring of all equipment and service needs, and notification
to the Assistant Director of Culinary Services of inventory and needs.
- Must be familiar with the automated accounting and reservation process, including take-out services and assist the DR servers as necessary.
- Responsible for reporting all hazardous conditions or equipment to Director/ Assistant Director of Culinary Services.
- Responsible for reporting all accidents/incidents to Director and Assistant Director of Culinary Services, and adherence to all Policies and Procedures related to Safety.
- Development and assistance with catering and special functions within the community.
- Maintain proper hygiene and personal appearance in a professional manner, and
monitor appearance and hygiene of all wait staff.
- Maintenance of confidentiality of all pertinent resident information to assure residents’ rights and employee confidentiality are protected.
- Must be able to communicate effectively with all residents regarding comments/concerns and hospitality.
SKILLS AND ABILITIES
- Should be a detailed oriented person with the ability to see the overall daily operation and supervise with accuracy and a positive attitude.
- Must be able to work a flexible schedule.
- Must be able to interface with TEAM MEMBERS at all levels, as well as relate to all residents and guests in a positive, pleasant and professional manner.
- Must be familiar with HACCP protocols.
- Must possess knowledge of federal, state and local policies and guidelines as they relate to Long Term Care and Retirement Communities. Basic
nutrition knowledge a plus.
