We’re looking for a Banquet Chef with creativity, leadership, and high-volume experience to oversee all aspects of banquet culinary operations. Your Role:
As our Banquet Chef, you’ll lead the banquet kitchen team and ensure exceptional quality, execution, and presentation for every event. From menu planning and food preparation to staff supervision and food safety, you’ll be the key driver behind our catering success.
What You’ll Be Doing:
- Oversee the day-to-day operations of the banquet kitchen for all hotel-hosted events
- Execute high-quality food production for plated meals, buffets, and receptions serving 10 to 500 guests
- Collaborate with the Executive Chef and Catering Sales Team on custom menus and presentations
- Maintain proper staffing levels and supervise a team of line cooks, prep cooks, and stewards
- Uphold food cost controls, inventory management, and waste reduction practices
- Enforce strict food safety and sanitation standards in compliance with local health codes
- Ensure flawless execution during events—on time, on spec, and stress-free
What You Bring:
- 5 years of banquet, hotel, or high-volume culinary experience (Chicago hospitality market strongly preferred)
- Proven leadership skills in a kitchen environment—team development, coaching, and accountability
- Culinary degree or equivalent experience
- Strong working knowledge of banquet production, plating logistics, prep timelines, and event flow
- Ability to manage multiple events simultaneously under tight timelines
- ServSafe certification required (or ability to obtain)
