Description:
The Bread Baker works in The Dixboro Project Bakery department and is responsible for all bread production for Dixboro House and The Boro To Go.
The Bread Baker is responsible for managing department inventory, quality control, product development and other operational processes to company standards. The Bread Baker will ensure correct ordering, production, receiving, unloading, storage, and rotation of merchandise. The Lead Bread Baker reports to the Executive Pastry Chef.
Requirements:CORE DUTIES & RESPONSIBILITIES
- Prior experience working with bread in a commercial kitchen is a must
- 1 years Prior experience working in a professional kitchen environment
- Bake bread for The Dixboro Project specs in accordance to set standards
- Participate in daily tastings and score bread quality
- Develop and maintain accurate recipes
- Ensure products are baked according to internal production timelines
- Communicate ordering needs to supervisors in a timely fashion
- Maintain bakery equipment according to standard maintenance procedures
- Ensure that proper dough cutting, portion control, and baking technique are being adhered to in the department
- Follow pars and with supervisor, adjust as needed to ensure demand is being met and waste is minimized
- Date and label all items going into storage areas, freezer and walk-in
- Assist in the pastry section as needed during busy times
- Develop new products to add value to the overall Bakery offerings
