Overview
The Expediter (Expo)/Runner plays a crucial role in ensuring seamless communication between the Front of House (FOH) and Back of House (BOH), serving as the final link between the food and the guest. This individual is responsible for guaranteeing that the guest's order is accurate, complete, and visually appealing, adhering to all specifications set by management.
Duties and Responsibilities:
- Evaluate orders to ensure they meet the Executive Chef's specifications and guest expectations.
- Report any prolonged ticket times or discrepancies to management promptly.
- Monitor menu items to verify adherence to established standards, reporting any deviations to the Executive Chef/Restaurant Manager.
- Maintain open communication with the BOH to address server needs efficiently.
- Collaborate with the manager/hostess to manage ticket times, preventing delays and maintaining smooth restaurant flow.
- Communicate large table assignments from the host stand to the culinary team during service.
- Fulfill guest orders by completing trays with appropriate share plates, steak knives, condiments, and other essentials.
- Prepare To-Go orders according to guest specifications, ensuring the to-go area remains stocked, neat, and clean, with accurate communication of stock levels to the restaurant manager.
- Maintain a clean and organized work area, including the storage of silverware, china, and glass.
- Polish silverware during downtime to prevent accumulation.
- Organize the service side of the kitchen line to facilitate efficient food preparation and presentation according to established standards.
- Ensure hot food is served at optimal temperature and cold food is served chilled.
- Possess an in-depth knowledge of menu items, ingredients, and promotions to effectively manage guest needs.
- Establish strong communication channels between the front-of-house team and the culinary team.
- Familiarity with both service and food production processes is recommended.
- May assist in preparing, verifying, and delivering amenities for guest arrivals.
- Contribute to creating an atmosphere that balances fun and professionalism.
