This is a paid externship and must be recognized by extern’s collegiate institution as academic credit towards their chosen culinary degree. This is a full-time externship which entails 32-40 hours per week for a minimum of 6 weeks.
As a Pastry Extern, you would be responsible for preparing and baking pastry products in the pastry shop. This includes but is not limited to:

Gain valuable, hands-on experience in a high-volume professional kitchen serving multiple outlets to include bars, restaurants, in-room dining, and banquets. Amazing opportunity to gain a deeper understanding of a hotel culinary operation and help determine which area in the industry you'd like to begin your career.

As a Pastry Extern, you would be responsible for preparing and baking pastry products in the pastry shop. This includes but is not limited to:
- Prepare / produce / bake all pastries and desserts for restaurants and banquets. Decorate pastries and deserts with creativity and skill.
- Maintain adequate supply of all prepared products on hand and ensure the proper storage / refrigeration.
- Ensure spoilage / waste are kept to a minimum by ordering and utilizing proper quantities and rotating products.
- Line up baked products in mobile carts according to the needs of the particular outlet / function.
- Set daily pars on all products to ensure freshness.
- Practice correct food handling and food storage procedures according to federal, state, local and company regulations
- Maintain a professional attitude, demeanor and appearance
- Demonstrate commitment to making a conscientious effort to eliminate or reduce the risk of injury to our guests and associates, damage to our property or the property of others. Know the correct action to take in the event of an emergency and demonstrate this knowledge by acting appropriately in the event of an emergency.
- Currently enrolled in an accredited culinary school
- Ability to commit to full-time hours for a minimum of 6 weeks - including days, nights, weekends, and holidays
