This role will be located at one of Discovery Land Company’s locations: The Hills, set outside of East Quogue, New York.

The Hills is seeking a Culinary Director to join the Food and Beverage Culinary Department.

The Culinary Director is responsible to develop insight-based menu recommendations and communicating consumer insights for the brand using diverse sources. As Culinary Director, you will be responsible for recommending best in class food and beverage offerings (alcohol and non-alcoholic). In addition, you will be working collaboratively with operating and marketing teams and will be expected to provide culinary leadership to company operators. In this role, you will be part of creating the Discovery Land Company experience for our members and fellow employees.

Key Responsibilities

  • Collaborate with the VP of Culinary, the culinary team, and F&B leaders to create exemplary culinary standards and an environment of continual improvement.
  • Direct high quality menu and food presentations of the highest level encompassing conceptual direction, sense of place and freshest ingredients possible for all F&B outlets in Dune Deck Beach Club and The Hills Golf Club. This includes restaurants, bars, beach dining, food truck, residential dining and temporary pop-ups. Serving breakfast, lunch and dinner daily.
  • Responsible for the day-to-day culinary operations.
  • Design and manage creative events for private parties and full membership celebrations for up to 600 guests.
  • Oversee fulfillment and operation of 2-6 Comfort Stations across both properties.
  • Provide thought leadership on food trends and menu development.
  • Lead efforts to identify and prioritize product improvement and margin optimization.
  • Help develop strategies for group event planning and execution.
  • Monitor member experience, satisfaction, and service.
  • Establish relations with local vendors to optimize farm to table and local inspired cuisine.
  • Work collaboratively with operations and supply chain for vendor/sourcing/product specifications.
  • Work closely to provide direction and hands on training to culinary team.
  • Implement new product rollouts unique to the personality and geography of the venue.
  • Perform sensory analysis on current products, new products, and competitors’ products as required.
  • Work with vendors during the new product development process as required.

Qualifications

  • Bachelor's Degree in food science, culinary, or related degree.
  • Minimum of 12-15 years of experience** in the food and beverage industry with experience in menu development, including R & D, product sourcing, field testing and rollouts, and measurement of success metrics. ** Executive Chef level for 8 of these years.
  • In-depth and thorough knowledge of emerging food trends and marketing concepts that can be adapted to fit emerging family entertainment concept.

Additional Requirements

  • Must be able to work flexible work hours/schedule including evenings, weekends, and holidays. Long hours may be required due to business demands.
  • Off-season travel will be required annually, November-March.
  • Positive attitude, professional demeanor, and exceptional communication and interpersonal skills to deliver service to members, guests, and team members.
  • Ability to work in a team environment.
  • Ability to stay calm and focused during the busiest of times.
  • Ability to read, write, speak, and understand English; additional languages preferred.
  • Ability to meet the physical demands of the position including, but not limited to, working indoors and outdoors in all weather conditions. Standing, walking, and moving for periods of greater than eight (8) hours, and lifting and carrying items sometimes greater than fifty (50) pounds.
  • Flexibility and ability to pivot to new projects and a desire to work in a fast-paced environment.
