JOB SUMMARY: The Dishwasher (Steward) plays a critical role in maintaining the cleanliness and sanitation of all food and beverage service areas, ensuring compliance with health and safety standards. This position is responsible for washing, organizing, and properly storing kitchen equipment, utensils, and dishware, as well as assisting in maintaining a clean and safe work environment in the kitchen and storage areas.
DUTIES & RESPONSIBILITIES:
- Clean and sanitize all kitchenware, dishware, utensils, and food preparation equipment using commercial dishwashing machines and manual washing techniques.
- Maintain cleanliness and sanitation in dish rooms, main kitchen, bake shop, food and beverage storage areas, and catering prep stations.
- Properly dispose of trash and recyclables, ensuring all waste is sorted and disposed of per company policies.
- Transport used dishware and kitchen equipment to proper cleaning areas.
- Assist with deep cleaning of kitchen equipment, including grills, broilers, ovens, stoves, and fryers, and regularly change fryer oil.
- Ensure proper storage of all cleaned and sanitized kitchenware and equipment in designated areas.
- Support banquet and catering operations by identifying equipment needs, pulling necessary supplies, and setting up/breaking down banquet bussing stations.
- Conduct routine inventory checks for kitchen and dishware supplies as needed.
- Follow safety guidelines and review Safety Data Sheets (SDS) for cleaning chemicals before use.
- Wash and dry kitchen towels as needed to ensure the culinary team has a sufficient supply throughout service hours.
- Maintain cleanliness of waste disposal areas, including the cardboard compactor, main trash dumpster, and recycling bins.
- Regularly sweep, mop, and towel-dry floors in all food and beverage areas to ensure a safe work environment.
- All other duties as assigned.
QUALIFICATIONS & SKILLS:
- Ability to work in a fast-paced environment while maintaining attention to detail.
- Must be able to read and understand work instructions, event orders, and safety procedures.
- Basic math and reading comprehension skills.
- Strong teamwork and communication skills.
- Must speak and understand basic English for safety and operational communication.
PHYSICAL & OTHER REQUIREMENTS:
- Ability to lift up to 50 lbs occasionally.
- Ability to push/pull a cart weighing up to 100 lbs with or without assistance.
- Ability to stand for extended periods and perform repetitive tasks.
- Willingness to work flexible schedules, including evenings, weekends, and holidays, as required.
