What are the responsibilities and job description for the Sous Chef position at The Lodge at Truitt Homestead?
The Lodge at Truitt Homestead, a division of Vantage Point Retirement Living, Southern Delaware's Premier Independent Living Community, is hiring a full-time Sous Chef to join our culinary team. As a Sous Chef, you will be responsible for assisting the Director with the overall operation of the Culinary Services Department and for meeting or exceeding the hospitality and service standard.

DUTIES AND RESPONSIBILITIES:
• Assist with implementing food services policies, procedures, and QA audits.
• Assist Director in menu planning and menu cycles according to cultural and regional food preferences, adjusts recipes to appropriate yield.
• Monitors the quality and consistency of the food to include food temperatures, portion control, palatability, and attractiveness of food, and implements changes to ensure quality according to established standards.
• Observes workers engaged in preparing, portioning, and garnishing foods to ensure that methods of cooking and garnishing and sizes of portions are as prescribed.
• Gives instructions to cooking staff in fine points of cooking.
• Cooks and carves meats and prepares portion dishes.
• Interacts with residents during mealtimes to monitor resident satisfaction or complaints about food service.
• Establishes and maintains an accurate system for the tracking of meals served. (Production Sheets and POS)
• Inventories food items monthly as per Culinary Director.
• Conducts regular Quality Assurance Audits.
• Practices safe and sanitary food handling.
• Attends “Food Forum” meetings as requested.
• Monitors and corrects safety and sanitation procedures in the kitchen.
• Assists other departments to ensure an organized and uniform system of services to residents and serving areas.
• Evaluates and recommends equipment purchases according to established procedures.
• Represent in a professional manor the needs and interest of the company during the interaction with residents, family members, staff, and vendors.
• Meet with residents and guests by making rounds in the dining room to get feedback on meals and staff.
• Competent to make changes in the POS system including menus, refunds, credit card transactions, and updates to POS system.

- High school diploma or equivalent preferred.
- One (1) year job related experience including food preparation, full-line menu items and therapeutic diets.
- Culinary apprenticeship or training preferred.
- Food Services Sanitation Certificate.
