Food & Beverage Manager

Summary: Responsible for ensuring the highest level of member/guest service by overseeing all aspects of food and beverage service. This includes managing staff, ensuring high-quality service and member/guest satisfaction, maintaining inventory and driving profitability, while minimizing costs.

Essential Duties and Responsibilities include the following. Other duties maybe assigned.

  • Manages service aspects in all food and beverage outlets and assists with events.
  • Hires, manages and trains staff in all technical and non-technical aspects of their role including Club standards of quality and service.
  • Coordinates with front desk staff regarding reservation details and monitors table reservation schedules.
  • Creates, maintains and distributes weekly schedules for staff and communicates changes as appropriate to all.
  • Assigns duties, work stations and responsibilities to staff and directs their performance.
  • Plans Dining Room set-up based upon anticipated guest counts and/or client needs.
  • Conducts pre-shift/pre-event meetings with staff to ensure smooth, efficient service.
  • Evaluates and supervises performance and carries out disciplinary action as needed, in accordance with the Club’s policies and applicable laws.
  • Inspects dining areas to ensure proper room preparation, including setup of tables, chairs, linens, table settings, glassware, etc.
  • Checks work areas for cleanliness, safety and sanitation.
  • Greets members and guests, ensuring that their needs are met.
  • Maintains member and guest satisfaction by handling inquiries, concerns or comments and providing solutions.
  • Conducts opening and closing procedures for the dining room, Oasis and Nineteen restaurants.
  • Authorizes staff to work overtime.
  • Requisitions supplies for service such as glassware, china silverware, etc. and returns items to inventory.
  • Maintains inventory of dining room items including silverware, coffee pots, water pitchers, salt & pepper holders, sugar bowls, etc.
  • Manages within budgetary restraint by maintaining effective profit and loss controls and monitoring labor costs.
  • Develops and implements programs to increase sales by identifying and targeting sales opportunities including promotions and training staff on “up-selling”.
  • Suggests menu items, specials and wines to guests.
  • Coordinates Room Service orders with the Front Desk and Kitchen Staff, oversees and directs the delivery and pick-up of room service orders and trays with the wait staff.
  • Produces daily sales analysis and other reports from the JONAS system.
  • Maintains accurate daily and weekly timecard punch details for service staff and approves time for payroll in ADP.
  • Meets with winery representatives and tastes wines to select wines.
  • Provides training for all service staff in proper wine service.
  • Communicates and teams well with other departments ensuring appropriate staff levels for all events.
  • Attends and participates in weekly leadership meetings.
  • Follows all safety, sanitation, and food handling practices to ensure the maintenance of high-quality standards.
  • Assists in preparing annual Food & Beverage budget.

Supervisory Responsibilities: Manages three dining room captains who assist in supervising up to 20 employees. Is responsible for the overall direction, coordination, and evaluation of these units. Carries out supervisory responsibilities in accordance with the organization’s polices and applicable laws. Responsibilities include interviewing, hiring, and training employees: planning, assigning, and directing work; appraising performance; rewarding and disciplining employees; addressing complaints and resolving problems with members and guests. Assists with all major club events in coordination with the Catering and Special Events department.

Education and/or Experience: Bachelor's degree (B. A.) from four-year college or university; or three to five years related experience and/or training; or equivalent combination of education and experience.

Language Skills: Ability to read and interpret documents such as safety rules, operating and maintenance instructions, and procedure manuals. Ability to write routine reports and correspondence. Ability to speak effectively before groups of customers or employees of organization.

Mathematical Skills: Ability to add, subtract, multiply, and divide in all units of measure, using whole numbers, common fractions, and decimals. Ability to compute rate, ratio, and percent and to draw and interpret bar graphs.

Reasoning Ability: Ability to solve practical problems and deal with a variety of concrete variables in situations where only limited standardization exists. Ability to interpret a variety of instructions furnished in written, oral, diagram, or schedule form.

Computer Skills: To perform this job successfully, an individual should have knowledge of Point of Service systems preferably JONA and proficient in Microsoft Office, including Word, Excel, and Outlook.

Specific vision abilities required by this job include close vision, distance vision, color vision, peripheral vision and depth perception.
