Tulsa’s most iconic hotels, The Mayo Hotel Penthouse Rooftop Bar Manager oversees operations of the rooftop bar. Including all food and beverage operations in the outlet. The manager is responsible for department revenue, cost controls, inventory, customer experience, marketing, supervision of employees, managing day-to-day operations, manage product quality, menu planning and pricing.
The Penthouse Rooftop Bar Manager is an integral part of the hotel’s management team and is solely responsible for living and enforcing The Mayo Hotel’s Culture, Customer service standards and all standards of operations. This position is the “Face” of the Penthouse Rooftop Bar.
The position requires the ability to work under pressure and to evaluate and select among alternative courses of action quickly and accurately.
The Penthouse Rooftop Bar Manager reports directly to the Director of Food and Beverage.
Both direct and indirect responsibilities include, but are not limited to the following:
RESPONSIBILITES
– In charge of handling all aspects of the bar operation including but not limited to staffing, scheduling, training, health & safety, license management, inventory and ordering management, supplier relations and negotiations, menu development, and budgeting
-Responsible for understanding all company policies, procedures, and standards, ensuring operations and team always align with these
– Assess that the bar has the organizational structure, processes, and tools to deliver strategic priorities and targets
– Identify opportunities and develop solutions to enhance the performance from Mayo Guest Satisfaction Scores, reviews, and all guest experience perspective
– Elevate the bar menu, taking pride in the hotels and bar’s history, yet thinking progressively and developing new beverage concepts as appropriate. Presentation of all offerings is of utmost importance.
– Lead, train, and coach the bar team towards achieving exceptional guest service
– Foster a culture of growth, development, and performance within the department
– Assist in preparation of the bars budget
– Work closely with other departments in the hotel to ensure service excellence
– Support projects across the business as required
– Ensure licenses are updated and in line with current legislation
– Comply with safe working practices, Health and Safety policy and ensure accidents/defects are reported immediately
-Responsible for food service within department
- Promotes teamwork, employee motivation and morale
-Provide leadership to departments to achieve their goals and objectives
-Prepare daily, weekly, monthly, quarterly, and annual reports, as required
REQUIREMENTS:
– Previous working experience within a luxury bar is required as a lead or higher is preferred
– Extensive knowledge of quality spirits and wines
– Excellent understanding of both classic and modern cocktails, their recipes and history

– Exceptional people-management skills to successfully manage and motivate the bar team
– Positive, cooperative, adaptable and with effective communication skills.
– Able to multi-task and work well with deadlines
– Strong computer literacy including knowledge of Microsoft tools and point of sales systems
-REQUIRED SHIFT HOURS FOR POSITION: Open and Close Bar @ minimum of Thursday, Fridays, and Saturdays. Work any special events in Penthouse.

BASE Pay Rate: $16/hour with tips and incentives potentially equaling up to $35/hour.
PREREQUSITIES
Education
- 2 years of experience in supervision in Food and Beverage
Reasoning Development
- Apply principles of rational system to solve practical problems and deal with a variety of variables in situations where only limited standardization exists. Interpret a variety of instructions furnished in written, verbal and pictorial form
Language Development
- Read at a level that allows comprehensive understanding and interpret the text being read
- Prepare business letters, expositions, summaries and reports using prescribed format and conforming to all rules of punctuation, grammar and dictation and style
- Participate in meetings and presentation and speak extemporaneously on a variety of subjects
Mathematical Development
- Fundamental math; addition, subtraction, multiplication, dividing, fractions, calculations of percentages, ration and portions and measurements. Perform arithmetic operation.
Computer Development
- Proficient in Microsoft Word, Excel, PowerPoint and Outlook
