Description
The Kitchen Manager is responsible for implementing and maintaining all operational procedures and programs related to heart of house (HOH). The KM should be the subject matter expert on Heart of House operating procedures, cost of goods, and labor controls. KM supervises the food prep and cooking, maintaining a fully stocked kitchen inventory and complying with safety and cleanliness standards. KM demonstrates a passion for food, quality, and excellence, knowing the exceptional food has no exceptions.
Responsibilities :
- Manage kitchen staff and coordinate food orders
- Supervise food prep and cooking
- Manages Heart of House Schedules
- Work with GM on menu development and price menu items
- Train kitchen staff on prep work and food plating techniques
- Order food supplies and kitchen equipment, as needed
- Keep weekly and monthly cost reports
- Maintain sanitation and safety standards in HOH
- Ensures products are stored at the correct temperatures and the recipe books are up to date with current menu items, portions and ingredients
- Oversees prep and ensures products are pulled correctly to meet customer needs
- Ensures HOH availability, phone, and email list are up to date
- Completes line checks on a daily basis
- Single digit Steritech scores- (consider quarterly self-audit)
- 95 QC Score- (consider quarterly self-audit)
