Description

The Kitchen Manager is responsible for implementing and maintaining all operational procedures and programs related to heart of house (HOH). The KM should be the subject matter expert on Heart of House operating procedures, cost of goods, and labor controls. KM supervises the food prep and cooking, maintaining a fully stocked kitchen inventory and complying with safety and cleanliness standards. KM demonstrates a passion for food, quality, and excellence, knowing the exceptional food has no exceptions.

Responsibilities :

  • Manage kitchen staff and coordinate food orders
  • Supervise food prep and cooking
  • Manages Heart of House Schedules
  • Work with GM on menu development and price menu items
  • Train kitchen staff on prep work and food plating techniques
  • Order food supplies and kitchen equipment, as needed
  • Keep weekly and monthly cost reports
  • Maintain sanitation and safety standards in HOH
  • Ensures products are stored at the correct temperatures and the recipe books are up to date with current menu items, portions and ingredients
  • Oversees prep and ensures products are pulled correctly to meet customer needs
  • Ensures HOH availability, phone, and email list are up to date
  • Completes line checks on a daily basis
  • Single digit Steritech scores- (consider quarterly self-audit)
  • 95 QC Score- (consider quarterly self-audit)

Cost Control :

  • Trains and develops heart of the house staff in all areas of cost control as needed
  • Monitors food and beverage costs through constant adherence to recipes and standards, proper training, and monitoring of waste
  • Monitor's weekly food and beverage cost projections compared to budget
  • Ensures all products are prepared and served according to company standards, utilizing only authorized products / vendors and procedures
  • Monitors heart of the house labor costs through constant evaluation of training, productivity, and weekly labor projections compared to actual hours
  • Maximizes food inventory, ordering, receiving costs controls and procedures through training, monitoring, inventory controls, and correct POS pricing structures
  • Shift Supervision :

  • Instill and reinforce our culture by effectively communicating to team members
  • Coaches and counsels team members to develop their skill sets
  • Creates and implements structure for team members with task checklists and routine
  • Executes effective and interactive HOH preshifts
  • Executes all heart of the house positions as needed, including expo
  • Implements plating and execution of core and promotional menu items including training team members
  • Performs regular kitchen line, food safety, and temperature checks to ensure overall efficiency of restaurant kitchen operations
  • Correctly handles all staff and guest incident reporting by utilizing appropriate forms and procedures
  • Holds team members accountable to established safety protocols / procedures
  • Responsible for adhering to cleanliness and food safety standards
  • Maintains the HOH uniform guidelines and policies for the HOH manual as outlined for the Melting Pot
  • Requirements

  • 40 hours per week
