Responsibilities
- Plan and execute the excellent food service of all Bistro & Wine Bar & Aqua Terrace meals.
- Scheduling and overseeing back of house staff, ordering products, writing prep lists, and assigning and foodservice tasks.
- Take the lead with kitchen staff to assist in day-to-day tasks, problem solving and needs concerning equipment and food supplies.
- Assist in the selection, hiring, organization and management of line cooks, sous chefs, and dishwashers.
- Work closely with the line cooks and sous chefs to supervise and coordinate preparation of food in accordance with established Mirbeau recipes and specifications.
- Prepare payroll on a weekly basis for sou chefs, line cooks, dishwashers, and pastry staff.
- Ensure the Human Resource policies and practices are applied consistently while adhering to federal, state, and local laws.
- Ensure the kitchen and production areas are clean and maintained at the highest safety standards.
- Cost every menu item and develop recipe cards and pictures.
- Review weekly forecasts, perishable and non-perishable food items inventory and order supplies as needed.
- Participate in month end food inventories.
- Have proper purchasing standards established for food items and different vendors controlling the quality of food received as per company guidelines, specifications, pricing, and standards on purchase orders.
- Create and recommend new recipes and methods to improve quality and increase revenue.
