We are looking for a Lead Cook at The Plaza at Moanalua.
Full Time
Starting salary $18 per hour
Job Purpose: The Lead Cook is responsible for assisting the Food Service Director in the management and direct supervision of the food service personnel to ensure efficient operations.
The following are essential functions of the job:
• Oversees proper food handling, labeling and preparation throughout the kitchen.
• Assists the Food Service Director with inventory control, ordering and routine maintenance of kitchen supplies and equipment as needed.
• Stocks and maintains all food stations, ensuring hygienic workspaces and storage areas.
• Ensures food in tastefully prepared, attractive and nutritionally balanced in accordance with the current recommended dietary allowances per state regulations.
• Prepares and serves meals within established menus in accordance with the - Hawaii Administrative Rules, Department of Health, Title 11, Chapter 12, and Food Establishment Sanitation.
• Prepares and serves modified diets as prescribed by a health practitioner, using dietician approved menus as established by The Plaza policies.
• Prepares nutritious snacks between meals as appropriate per community.
• Makes authorized substitutions and documents them appropriately.
• Works collaboratively with other departments, attends community meetings, trainings and in-services as assigned.
• Is familiar with disaster and fire plans as specified in policies and procedures manual and assist with building emergencies as instructed.
• Adheres to all employment requirements established in the Team Member Handbook, the Operating Policies and the Procedural Manuals.
• Maintains food safety standards in accordance with Hazard Analysis Critical Control Point (HACCP).
• Performs other duties as assigned by the Food Service Director.
Supervisory Responsibilities
• Assist in recruiting, selecting and training kitchen/dietary and other departmental staff.
• Schedules department working hours, personnel, and work assignments to maintain quality service, sanitation and provides or schedules relief on the floor as needed (e.g. staff call outs).
• Monitors and evaluates staff and coordinates break schedules.
• Mentors and provides coaching and training to kitchen staff as needed.
Required
• High school diploma or equivalent.
• Current Tuberculosis clearance, according to the State of Hawaii Department of Health regulations.
• CPR and First Aid Certification.
• Food Handling Certification.
• One (1) years' experience or training as a cook at The Plaza.
Preferred
• Associates Degree or Bachelor's Degree.
