Position Summary:
We are seeking a passionate and highly skilled Head Baker to lead our bread and dessert program. This individual will be a key member of our culinary team, responsible for crafting exceptional breads, managing all dough preparations (pizza and focaccia), and creating an enticing selection of authentic Italian desserts. The Head Baker will also play a pivotal role in developing our bread menu, hiring and training bakery staff, and ensuring the highest standards of quality and consistency.
Responsibilities:
- Artisan Bread Production:
- Develop and execute recipes for a variety of artisan breads, including sourdough, ciabatta, and other specialty loaves.
- Maintain consistent quality and texture in all bread products.
- Manage all aspects of bread production, including mixing, proofing, shaping, and baking.
- Dough Management:
- Oversee the preparation and management of pizza and focaccia dough, ensuring optimal consistency and quality.
- Develop and maintain dough recipes and production schedules.
- Ensure proper storage and handling of dough to prevent waste.
- Menu Development:
- Collaborate with the Head Chef to develop and refine the bread menu, incorporating seasonal ingredients and innovative techniques.
