Job summary:
Responsible for grinding, cutting, trimming, or preparing meat for store use or sale.
Summary of essential job functions:
- Use knives, cleavers, or other equipment to perform meat cutting and trimming.
- Clean, trim, slice, and section primals.
- Cut, trim, and grind meats, such as beef, pork, poultry, and fish.
- Receive, inspect, and store meat upon delivery, to ensure quality.
- Inspect meat products for defects, bruises or blemishes and remove them along with any excess fat.
- Separate meats and byproducts into specified containers and seal containers.
- Wrap, weigh, label and price all products.
- Estimate requirements and order meat supplies to maintain inventories.
- Produce product of high quality while meeting required specifications.
- Ensure the quality and freshness of product throughout the production process.
- Minimize shrink and waste (there should be 0 shrink and 0 waste)
- Follow proper trim specs (e.g. beef top round)
- Follows recipes exactly and consistently.
- Perform counts and ensure all inventory is accounted for and reported according to company policy
- Maintain adequate inventory levels.
- Complete specials projects and other duties as assigned
- Timely and consistent attendance.

- Complete tasks in a timely and efficient manner.
- Ensure logs and proper food handling procedures are met to ensure food safety standards.
- Ability to work a flexible schedule including holidays and weekends.
Knowledge, skills and abilities required:
- Previous meat cutter/grind experience preferred.
- Strong interpersonal and verbal communication skills
- Ability to multitask and use organizational skills
- 2-3 Years meat cutting/grind experience preferred
