TITLE :
Quality Assurance Production Manager
SUMMARY :
Provide safe, wholesome, and specified food products to our stores, customers, and operating partners. Ensure all products leaving TooJay's master prep kitchen are handled safely, following all government and USDA regulations, industry standards, and are safe for re-sale. This includes, but is not limited to full compliance regarding handling, cooking, and cooling procedures; general storage of all goods and packaging; proper methods and procedures for all sanitation and cleaning.
RESPONSIBILITIES :
- Develop, implement and manage quality assurance programs, policies and procedures to ensure compliance with regulatory and industry standards
- Ensure compliance with relevant food safety regulations such as HACCP, GMP, and FSMA
- Collaborate with cross-functional teams to ensure product quality is maintained throughout the entire manufacturing process, from raw materials to finished products
- Manage and analyze quality data and metrics to identify areas for improvement and implement corrective actions
- In complying with USDA regulations and industry standards, for food safety protocols you will be responsible for keeping daily logs of temperatures such as :
- All cooler and freezer temperatures
- Ware washing final sanitizing temperatures
- Food receiving temperature logs
- Dry food storage rooms
- Cooked foods heating and cooling logs, for example :
- Cooked foods are :
- cooked to proper temperatures by batch
- cooled down in proper time limits
- packaged and labeled correctly
- stored at proper holding temperature for shipment
- Cold prepped foods are :
- monitored for temperature integrity
- re-call procedures in place for all products we sell
- sanitation of facility
- log of all washing devices sanitation temperatures
- proper use of chemicals including storage
- General cleanliness of facility maintained in tour quality condition
- Waste disposal is handled according to local and federal laws
- Insect and rodent protections in place and maintained
- Employee safe food handling :
- Ensures all employees have a valid food handlers' certificate
- Ensure all employees are trained to cooking and cooling standards
- Safe chemical handling and storing
