What are the responsibilities and job description for the Cook I - FTB - Varies position at Torrance Memorial Medical Center?
Under direction of Executive Chef, prepares Cafeteria, Special Function and Doctor's Dining Room menu items.
Core Competencies
Prepares and cooks a variety of menu items for cafeteria, doctor’s dining room and special functions following standardized recipes.
Determines food quantities and portion sizes needed by following daily production sheets.
Prepares any special food items needed.
Completes assigned food prep and pulls products as needed.
Follows safe food handling and HACCP procedures for the storage, preparation, holding and cooling of all food items. Demonstrates how to calibrate a thermometer.
Labels and dates all food items.
Monitors food temperatures, taste and appearance and completes required documentation.
Takes appropriate corrective action as necessary.
Performs detailed and extensive cleaning of assigned areas per cleaning checklist. Demonstrates knowledge of chemicals and personal protective equipment ie. goggles, gloves, aprons and slip resistant shoes.
Sets up cafeteria food steam table line.
Relieves or supports patient cooks as needed.
Communicates and coordinates work flow and tasks with other production personnel to ensure proper utilization of time and equipment.
Supports cafeteria hot production and service as needed.
Reviews menu cycles, production sheets and communicates with Store Clerk on food items needed.
Demonstrates competency in providing health care service and maintaining interpersonal relationships in own job category to all age groups as applicable to job functions.
Operates all kitchen equipment required for food production and uses Personal Protective Equipment, ie Cut resistant gloves.
Works grill, steam table, Baguette Expressions and Especially for You station as assigned.
Cooks food to order from grill and serves customers from steam table when necessary.
Performs more complex and skilled tasks such as, but not limited to the following duties: cashiering, cooking made to order grill items, working with equipment that requires special skills and training.
