General Manager – Trasca & Co Eatery & Ponte Vedra Tap Room
Location: Ponte Vedra Beach, FL
Compensation: $50,000/year salary partial inclusion in tip pool (currently averaging $300 per pay period)
Schedule: Full-time, Bi-weekly pay (40-60 hours per week as business requires)
Position Overview
We are seeking a dynamic and results-driven General Manager to lead our team at Trasca & Co Eatery & Ponte Vedra Tap Room. This role is responsible for overseeing all restaurant operations, ensuring exceptional customer service, maintaining high-quality food and beverage standards, and driving profitability. The ideal candidate is a proactive leader with a passion for hospitality, strong business acumen, and the ability to foster a positive team environment.
Key Responsibilities
Operational Leadership
- Develop and execute operating goals and objectives to enhance restaurant performance.
- Monitor and manage budgets, analyze variances, and take corrective actions as needed.
- Implement and maintain standard operating procedures to optimize efficiency.
- Assist in marketing efforts and promotional activities to drive sales.
- Driving catering business forward to increase restaurant sales.
- Maintain accurate business performance records and analyze key financial metrics.
- Ensure all health and safety standards are met, maintaining a 90% health inspection rating.
Staff Management & Development
- Recruit, train, and coach a high-performing team.
- Conduct bi-annual performance reviews and facilitate ongoing team development.
- Create and manage staff schedules to ensure efficient operations, ensuring proper coverage at all times.
- Monitor and evaluate staff performance, providing feedback and guidance as necessary.
- Foster a positive, team-oriented culture that prioritizes exceptional customer service.
- Lead Trasca 101 Training sessions for new hires as needed.
Food & Beverage Operations
- Analyze food and beverage costs, manage inventory, and oversee purchasing to ensure profitability (goal: 30% or less cost of goods monthly).
- Ensure proper food safety and sanitation standards are upheld at all times.
- Maintain menu consistency, monitor portion sizes, and minimize waste.
- Oversee quality control, ensuring high standards for food preparation and presentation.
Customer Experience & Service
- Engage with customers to build relationships and ensure satisfaction.
- Handle customer inquiries and complaints with professionalism and efficiency.
- Maintain a 9.0 or greater satisfaction rating on all restaurant customer surveys and a 4.5 rating on social media platforms.
- Enable flawless guest communication (in-person, phone, email, social media, etc.).
- Ensure smooth catering and event operations, from outreach to execution.
Facility & Vendor Management
- Oversee equipment maintenance and coordinate necessary repairs.
- Manage vendor relationships and negotiate purchasing agreements.
- Maintain cleanliness across all areas, including the dining room, bar, kitchen, restrooms, storage units, and all equipment.
Administrative & Financial Management
- Manage profitability, aiming for 10% net profit.
- Keep cost of labor at 30% or less monthly.
- Assist in payroll preparation and daily deposits.
- Manage ordering for food, kitchen equipment, and cleaning supplies.
- Handle POS and IT systems (computers, printers, software, etc.).
- Revise and implement checklists and SOPs for daily operations as needed.
Qualifications & Competencies
- Preferred experience in restaurant or hospitality management, but not required.
- Strong leadership, problem-solving, and decision-making skills.
- Excellent communication and interpersonal abilities.
- Financial acumen with experience in budgeting, cost control, and P&L management.
- Ability to multitask, adapt, and perform in a fast-paced environment.
- Passion for providing top-tier customer service and team development.
- Ability to challenge the status quo and recommend improvements.
- Ability to drive sales through community outreach and innovation. i.e Catering, private events, promotions, etc.
