About This Position
Responsible for maintaining current inmate diet list and ensuring that diet trays/snacks are accurately prepared. Assist Food Service Director (FSD) in forecasting, purchasing, inventory maintenance, and supervision of meal service. Supports daily operations and maintains a close relationship with facility Medical services and TSG Regional Dietitian (RD).
Essential Functions, Duties, and Responsibilities
- Review facility diet list daily and update TSG diet roster accordingly
- Communicate any non-formulary diets to RD
- Provide FSD with accurate diet forecast numbers
- Schedule, present and implement employee diet training for TSG associates.
- Train diet cooks and ensure correct production of needed diet items for meals
- Implement and maintain system for pre-production of bulk diet items
- Train inmate servers on assembly of diet trays; inspect for accuracy
- Assist FSD with inventory, forecasting and production paperwork.
- Consults with and maintains an open relationship with client Medical Providers
- Maintain compliance of HACCP, Ecosure, State Audits, SSOP plans and in-house Quality Assurance programs for all areas of the assigned scope.
- Conducts/Assists facility audits, documents findings, and brings about corrective actions, as needed.
- Daily responsibilities will also include maintaining quality assurance policies throughout the production processes, including analytical testing of products and record keeping.
- All other duties as assigned by FSD
What You'll Need
- Associate degree (A. A.) in Dietetic Technology (following The Commission on Dietetic Registration curriculum) required
- Bachelor degree (B.S.) from four-year college or university in Nutrition or Dietetics (following The Commission on Dietetic Registration curriculum) preferred
- Registered Dietetic Technician (Commission on Dietetic Registration)
- Experience in food service administration is strongly preferred
- At least two (2) years' experience in clinical dietetics programs
- Communicate professionally and effectively through both oral and written forms.
- Utilize standard Microsoft Office products and Outlook at an effective level.
- Demonstrate a high level of organization.
- Ability to multi-task and prioritize duties and requests from the field.
